This month for the Secret Recipe Club, I was given the blog Cooking on the Ranch, written by Lee Ann Brown. This is the first month since I have been a part of the SRC that I had a difficult time deciding on what to fix. There were so many recipes I wanted to try — like this one for Lemon Chicken Thighs. I finally decided on her Spicy Popcorn recipe since I was in the mood for some movie watching.
I love how delicious this popcorn turned out. This recipe almost resembles the snack I had when I went to visit the Nestle Test Kitchen last year. I think the only difference is they added Parmesean cheese, which I will do next time to see how it tastes with that.
- 3 tablespoons of oil
- ½ cup of popping corn
- ½ t. cumin
- ½ t. chili powder (any flavor will do)
- ½ t. smoked paprika
- ¼ t. cayenne pepper
- 1 tablespoon of butter
- salt for seasoning
- Place your oil in a pan on the stove on high. Add your corn kernels and cover with a lid to cook the corn.
- Once the corn has popped all the way, place in a bowl and sprinkle with salt, cover with a plate and gently shake. Add 1 T. melted butter, cover again and gently shake. Pour in spicy mix from above and cover and shake again.
This recipe is great for a quick snack or to bump up the flavor of your boring plain popcorn.
