I am a lover of pimento cheese. Seriously — I could eat it on everything under the sun. In fact, not too long ago, I made a delicious Pimento Cheese burger which turned out to be one of the best things I ever made. I stopped buying it store bought when I realized that I could make pimento cheese from scratch — right in the comfort of my own kitchen.
Honestly I don’t know why I waited so long to make this from scratch. I used to have a friend that made it all the time and the flavor and taste was so much better than any I had ever had before.
Especially if you top that sandwich with a delicious fresh, homegrown tomato.
So start with all your ingredients. Most of these should be pantry staples, with the exception of pimentos.
Once you get all those ingredients gathered, simply dump them into a bowl for mixing. Make sure your cream cheese is at room temperature. It will mix a lot better this way.
Then take a wooden spoon or a rubber spatula and mix it all together. Now — you can eat it at this point, but it gets much better if you place it in the refrigerator for a couple of hours first.
Once you have let it rest in the refrigerator, now it’s time to eat it! Grab your favorite bread and load it up.
I also enjoy eating pimento cheese on crackers too. It makes the perfect dip.
Some other options you can do is simply put it on bread and grill it to have a grilled pimento cheese sandwich or put it on top of a burger like I did.
The possibilities are endless!
- ¼ cup cream cheese, room temperature
- ½ cup mayonnaise
- ½ cup sour cream
- ¼ tsp garlic salt
- 2 cups shredded sharp cheddar cheese
- ½ cup shredded Parmesan cheese
- ½ cup diced pimentos
- Whip cream cheese until smooth. Add in mayonnaise, sour cream, and garlic salt. Whip until smooth. Stir in remaining ingredients. Cover and refrigerate 30 minutes, or until ready to serve.
