Last week was a week full of photographing blog posts. My daughter has become an important part of that, as I have hired her to help me build my online business. To show my appreciation to her this holiday season (because it has already been a busy one!), I decided to make her a more upscale lunch. I created this Pomegranate BBQ Basted Cornish Hens recipe with her in mind.
During Thanksgiving, I discovered that she is not a big fan of turkey, so I fixed her a cornish hen and she loved it. So, when I went shopping at Walmart a couple of weeks ago, I found a twin pack of Tyson® All Natural Premium Cornish Hens and decided to create a beautiful meal for her to show my appreciation for all she does for my blog.

So after, buying these, I went home and started making a yummy and very beautiful lunch for her.

To make this very upscale but easy dish, all you need are three main ingredients — pomegranate juice, Brown Sugar BBQ sauce, and the Tyson® All Natural Premium Cornish Hens.
Mix together 1 cup of bbq sauce and 1/2 cup of Pomegranate juice and set it aside.
Then, take your hens, wash them off, and dry the skin. Place in a dish and bake according to the package directions. During the cooking process, pull your hens out ever so often and baste with the bbq sauce.
After about the 4th or 5th time, the bbq sauce will start caramelizing on the skin making it look scrumptious and delicious.
I roasted some brussel sprouts and butternut squash to put as the base around the hends when they came out of the oven. It really added a pop color to the dish.
- 1 cup of brown sugar bbq sauce
- ½ cup of pomegranate juice
- 2 Tyson Premium Cornish Hens
- Mix together the bbq sauce and pomegranate juice. Set aside.
- Clean hens and prepare them according to package directions. Bake them for the allotted time on the package.
- Every 15 minutes baste the hens with the bbq sauce.
- For the last 5 minutes of cooking, place under the broiler to caramelize it.
- Serve with your favorite veggies.
These hens are perfect for me because anytime I want to make a normal meal feel a bit more special, I can. They can easily be cooked on the grill, roasted in the oven, or even made in your slow cooker.
