September is Childhood Obesity Month and I decided to team up with Monk Fruit In The Raw to show you how you can reduce the sugar in some of your favorite foods without sacrificing taste and flavor. I decided to make a batch of my favorite cookies — Peanut Butter Cookies — and to top it off, these are also gluten free! I switched out some of my sugar and I cannot wait to tell you the results. Read on to find out more!
These cookies are some of my favorite because first and foremost, there are only 3 ingredients to these delicious mouthwatering bites, and they whip up in no time. If I need a dessert super fast because company is coming over, I can throw a batch of these in the oven and have them done in under 15 minutes.
- 1 cup of creamy peanut butter
- 1/2 cup of Monk Fruit In The Raw
- 1/2 cup of sugar
- 1 egg
- preheat the oven to 350 degrees. Mix together all of the above ingredients and mix together good. Place heaping teaspoons on a silicone baking mat or parchment paper, leaving room in between.
- Add criss cross marks on the top with a fork and then bake for 8-9 minutes or until edges began to brown.
- Remove from the oven and place on a cooling rack. Enjoy!
More than that though, is the fact that they are healthier because they don’t have a lot of extra ingredients. While the recipe does call for one cup of sugar, I can use Monk Fruit In The Raw and cut down on the sugar in the ingredients.
Monk Fruit In The Raw is a wholesome, zero-calorie sweetener, made with real fruit. It has a simple, sweet taste that can be used in any recipe that calls for sugar. I just did 1/2 cup of sugar and 1/2 cup of Monk Fruit In The Raw in place of the full cup of sugar in this recipe and it tasted amazing!
Once you get everything mixed up, put heaping teaspoons on silicone baking mats, then press the criss cross pattern in your cookies with a fork and bake in the oven.

Monk Fruit In The Raw has a simple ingredients list – no table sugar, molasses or sugar alcohols added. You can get it in a Baker’s bag size (which is great if you cook a lot), or you can get it in packets, which is perfect for sticking in your purse to take with you when you go out to eat (add 1/2 packet to a glass of water and add 3 -4 lemon slices for the perfect glass of lemonade).
The Monk Fruit In The Raw added to my peanut butter cookie recipe really made the taste stand out. Gone was the gritty texture that sometimes is left behind, and its place was the most succulent flavor I have ever tasted. The sweetness from the Monk Fruit In The Raw added to the peanut butter gave it a very intensifying cookie flavor.
I am sold on switching out and reducing my sugar intake, and I love how delicious this zero calorie sweetener makes my food taste.
