This leveling is especially important for cake layers that have domed and therefore have a lot of correcting to do to stack up. Cutting It Down to Size
One of my favorite methods for leveling a cake layer is to take a large cake knife and shape up the layers after they’ve baked and cooled. By cutting the layers with the knife, you can slowly crop away any extra cake so that your layers all stack up evenly. It is not the cleanest method, but it is a quick fix and is better than having a sloppy cake because you didn’t level it.
Weighing It Out
If you’re using identical pans for each of your layers, the next easy option is to use a scale to weigh them. You may have tried your best to get the layers as even as possible, but judging by eye doesn’t always work and you think it will.
By weighing each pan and adjusting the contents until they weigh the same amount, you can guarantee that one layer won’t have more mass than another.
The Pressing Method
You can also take a hot cake with a small dome and correct it as best you can by hand. Using a towel, gently press on the dome, but be careful because the pan will still be hot.
You will also need to make sure your towel is clean and that you protect yourself from any hot steam that releases. Finally, don’t push too hard on the cake, or you will cause it to collapse!
Flat Cake Strips
Because having a hard time getting even cake layers is a common problem, some companies have created solutions specifically to address this issue.
Flat cake strips are an example of just that. These specialized strips work to draw the moisture out evenly of a layer while it is baking. This prevents the layers from doming because once that happens it is very challenging to correct the unevenness.
These strips make a visible difference when the layers are cooling next to each other on a cooling rack. They’re also easy to use as they’re wrapped around the pan while the cake layers are baking in the oven. Flat cake strips are a new technology that is slowly gaining popularity in the baking world.
What You Put It On Counts
The final detail for having level cake layers is to make sure you’re both working and displaying the cake on a flat surface. You can do this with a durable cake stand. You can spend all the time you want perfecting your layers, but if your cake does not show off well on a cake stand, then there really was no point to all the added effort.
