Mint M&M Brownies

Mint M&M Brownies — the perfect St. Patrick's Day Treat — especially if you use my homemade brownie recipe!

Before you know it, St. Patrick's Day will be here, so I thought I would share with you an easy recipe for eMint M&M Brownies. Instead of using a boxed version, I always make mine from scratch.

Making these brownies only requires just a few simple ingredients, but what puts them over the top are the Mint M&M candies that they are topped with.

How to Make Mint M&M Brownies

If you keep a stocked pantry at home, then you will have no trouble whipping up a batch of these.

To start with you only need  —

  • 1/2 cup butter
  • 1 cup white sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder

Preheat oven to 350 degrees F. Grease and flour an 8-inch square pan. I used my Pioneer Woman pan that the kids got me for Christmas. They are a glass version of Pyrex but they have the cute PW logo on the bottom.

In a large saucepan, melt 1/2 cup butter. Remove from heat, and stir in sugar, eggs, and 1 teaspoon vanilla. Beat in 1/3 cup cocoa, 1/2 cup flour, salt, and baking powder. Spread batter into prepared pan.

Once you spread the batter in the pan, top it with 1 cup of Mint M&M Brownies.

Bake in preheated oven for 25 to 30 minutes. Do not overcook.

My daughter likes a chewier brownie, so I always undercook mine just a bit. She likes it to be cooked enough it will hold together, but gooey enough that it's almost like brownie batter.

Once they are done, give them a little bit to cool off before you cut them. Then, once you do, the M&M's stay melted and your brownies end up with this amazingly delicious mint flavor.

These brownies are full of mint flavor and delicious chocolate. Perfect for celebrating St. Paddy's day.

Total Time 35 minutes

Ingredients

  • 1/2 cup butter
  • 1 cup white sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1 cup of M&M Mint Candies
  • 1/4 teaspoon baking powder

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Grease and flour an 8-inch square pan.
  3. In a large saucepan, melt 1/2 cup butter.
  4. Remove from heat, and stir in sugar, eggs, and 1 teaspoon vanilla.
  5. Beat in 1/3 cup cocoa, 1/2 cup flour, salt, and baking powder.
  6. Spread batter into prepared pan. Then top with 1 cup of Mint M&M Mint candies.
  7. Bake in preheated oven for 25 to 30 minutes. Do not overcook.
