One Pan Lemon Shrimp and Asparagus

I love that this recipe incorporates some of my favorites and is SO healthy!

I love a good healthy delicious lunch and this one for my One Pan Lemon Shrimp and asparagus is AMAZING! I am not joking. The best part? Everything is made in one pan so cleanup is a breeze.

I am all about healthy recipes these days. I am working hard to shed the 50 pounds I have packed on over the last few years and eating better is my goal in 2018.

How to Make One Pan Lemon Shrimp and Asparagus

I don't know about you, but I love, love, love shrimp. I am not a fan of fried shrimp, but if you grill it, roast it, or saute it, I am there.

When you mix butter and lemon with shrimp you get the most delicious flavor ON THE PLANET — am I right?

Ok — for starters for this meal, you are going to take your asparagus and break off the tough ends. Then you are going to drizzle on some olive oil, minced garlic and salt and pepper.

You will be roasting in the oven for about 5-7 minutes.

Then you will be adding your shrimp, spices, more garlic, and buttah — lots and lots of delicious buttah! And lemon — the hero of this one pan show.

Then finish it off in the oven. Once you do that, the shrimp are delicate and tender and pop with flavor in your mouth.

Serve it alongside the roasted asparagus. I topped mine with a little fresh Parmesan and an extra squeeze of lemon.

One Pan Lemon Shrimp and Asparagus

Ingredients

Asparagus

  • 1 pound thin/medium asparagus, ends trimmed
  • 1 tablespoon olive oil
  • 1 garlic clove, minced
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper

Shrimp

  • 1 1/2 pounds medium uncooked peeled shrimp deveined*
  • 1 tablespoon olive oil
  • 2-3 garlic cloves, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon paprika
  • 1/8 teaspoon pepper
  • 1/8-1/4 teaspoon red pepper flakes
  • 3 tablespoons chopped fresh parsley
  • 1 1/2 tablespoons lemon juice or more to taste
  • 3 tablespoons butter, cubed

Instructions

  1. Preheat oven to 400 degrees F.
  2. Line a sheet pan with foil and lightly spray with cooking spray. Add asparagus and drizzle with 1 tablespoon olive oil. Add 1 minced garlic clove, 1/4 teaspoon salt and 1/8 teaspoon pepper. Toss until evenly coated then line asparagus in a single layer. Roast for 5-7 minutes depending on thickness.
  3. Meanwhile, remove tails from shrimp.
  4. Remove pan from oven and push asparagus to one side of the pan (keep in a single layer). Add shrimp and drizzle with 1 tablespoon olive oil. Add 2-3 minced garlic cloves (or more to taste), 1/2 teaspoon salt, 1/4 teaspoon paprika, 1/8 teaspoon pepper, 1/8-1/4 teaspoon red chili flakes and fresh parsley. Toss until evenly coated then line shrimp in a single layer.
  5. Top asparagus and shrimp with cubed butter, evenly spaced. Roast for 6 minutes or just until shrimp is opaque.
  6. Remove pan from oven and drizzle with lemon juice. Season with additional salt and pepper to taste.
