Smoky BBQ Chicken and Veggie Skewers

One of my favorite healthy dishes to make is skewers. There is just something about a delicious tasting sausage, grilled veggies, and of course some kind of dipping sauce, right?

I recently had the chance to try out the al fresco Sweet & Smoky BBQ Chicken Sausages, and since I love a good sausage skewer, I created these Smoky BBQ Chicken and Veggie Skewers.

One of the things I love about these chicken sausages, is that they are made with lean, skinless chicken meat, which definitely makes them better for you.

I normally eat those pork or beef sausages, but using the al fresco chicken sausages, frees up my guilt! They contain 70% less fat and 30% less sodium and they are gluten free, so anyone can eat them — and let me tell you — they are delicious.

So here is how I made these amazingly delicious skewers.

Start by chopping in a rough chop all your veggies, and then slice your chicken sausages to your preferred thickness.

Then skewer them on a bamboo stick until you reach the top. Alternate chicken sausage and veggies however you like.

Then, you can grill them outside if you like, but here in our neck of the woods, it has been raining HARD nonstop for almost 4 days. So, I decided to grill mine inside on my grill pan.

Take your olive oil and add two turns of the pan to your grill pan and then place your skewers on the pan to grill and cook through.

The veggies and chicken sausages will start to caramelize which will make the flavors come out even more.

When they are done, plate them up and serve with your favorite dipping sauce. Some in my family like BBQ sauce, but for me, I like a nice tangy lime and ranch dipping sauce.

    Those look incredible! I love grilling skewers in the summer. They are quick and healthy and super tasty!! Can’t wait to try this new flavor!

    That looks delicious. My husband makes something similar but he uses boneless skinless chicken breast.
