- 1 cup hot coffee freshly brewed
- 2 tbsp unsalted butter

Directions
- Combine all ingredients in a blender. Blend until smooth and frothy.
#2 Green Goddess Salad Dressing
This dressing is super delicious and full of great vitamins and minerals. The best part is that you can sub out your regular oils in your dressings for MCT oil to bump up the nutrition and health in your current homemade dressings.
Ingredients
- 1/3 cup cashew butter
- 1 tbsp chopped parsley
- 1/2 cup chopped green onion
- 1 tbsp sesame seed
- 2 tbsp Coconut aminos
- 2 tbsp apple cider vinegar
- 2 tbsp fresh lemon juice
- 1/2 tsp kosher salt
- black pepper to taste
- 1 tsp minced garlic
- 1/3 cup almond milk
- 1/4 cup MCT oil
- 2 TBSP water (only use this if you want your dressing thinned out more)
Directions
- Place everything but the oil in a food processor. Pulse and then, while the food processor is running and add in your oil slowly. Add more onion or salt at the end if desired.
#3 Buttered Salmon with Caramelized Onions
Ingredients
- 8 ozs salmon fillet
- 1/4 c onion, sliced
- 2 tbsp unsalted butter, divided
- 1 tbsp MCT oil
- 1/4 tsp lemon juice
- 1/4 tsp fresh dill, chopped fine
Directions
- Grill the salmon fillet until tender.
- In a skillet, place your onions with a pat of butter and cook until they reach a caramel color. Remove from heat and set aside on a plate.
- Heat butter, MCT oil and lemon juice in the skillet. Blend well.
- Pour the sauce over the salmon and sprinkle with chopped dill.
- Pair with a salad, or side of broccoli or cauliflower and serve immediately.
