Who doesn't love ice cream? I love taking it and adding my own spin to make fun and festive desserts to share with my family like my Dark Chocolate Cherry Ice Cream Cookie Sandwiches.

My daughter and I wanted to fix a brand new to us recipe this year to enjoy out on the back deck, so I've been playing around with flavors to figure out what everyone in our family would like.

Around this time of year, I usually make heavy hot desserts like apple pie, blackberry cobbler, or chocolate cake. This year though, I decided to get outside of my box and make homemade cookies to serve with ice cream.

This idea came to mind while I was doing some grocery shopping at Walmart. I happened to be on the frozen food aisle looking at all the ice cream when I came across the new Blue Bunny® flavors. I immediately grabbed the Blue Bunny® Cherry Pickin' Chocolate®.

The dark chocolate chunks in the ice cream gave me the idea to make some delicious Dark Chocolate cookies and serve them with the Blue Bunny® Ice cream. I also picked up the Blue Bunny® Bunny Tracks® for those in my family who do not like cherry flavored ice cream.

How to Make Dark Chocolate Cherry Ice Cream Cookie Sandwiches

So — let's get to cracking on those dark chocolate cherry ice cream cookie sandwiches! If you like making cookies, then this recipe will literally take you no time to make.

Preheat the oven to 350 degrees.

Start with your cookie ingredients —

These dark chocolate cherry ice cream cookie sandwiches are absolutely delicious. Perfect for the summer
  • 10-ounce package of dark chocolate chips
  • 1 cup of all-purpose flour
  • 1/4 cup baking cocoa
  • 1 teaspoon of baking soda
  • 1/2 teaspoon salt
  • 1 stick of butter, softened
  • 1/2 cup packed brown sugar
  • 1/4 cup white sugar
  • 1 large egg
  • 1/4 teaspoon vanilla

Start by melting 2/3 cup of the dark chocolate chips in the microwave. Do it for 30 seconds, remove from the microwave, and stir.

Now, put it back in there for about 15 seconds and then pull out stir. Do this just until it is melted.

Mix together the flour, baking cocoa, salt, and baking soda. Set aside.

In your mixer bowl, combine butter and sugars and cream together.

Add in the egg and vanilla. Mix well. Stir in the chocolate and mix well. Now, add in the flour mixture. Your dough will be super thick at this point. That's okay. It is supposed to be thick like that!

Take the remainder of your dark chocolate chips and add into the batter and fold them in gently.

Using a cookie scoop, scoop your dough out onto a parchment-lined baking sheet or you can use a silicone mat as I do.

Then bake in the oven for 10 minutes. When they come out, give them just a bit to cool before transferring to a wire cookie rack to cool all the way.

Once the cookies cool all the way — and they need to be cooled all the way so that your ice cream does not melt, you can put your sandwiches together.

Using the Blue Bunny® ice cream of your choice — mine was the Cherry Pickin' Chocolate®, take one cookie and add a dollop of ice cream to the top.

Then top that with another cookie and you will have the most perfect sandwich on the planet!

Dark Chocolate Cherry Ice Cream Cookie Sandwiches

These dark chocolate ice cream cookies are absolutely delicious!

I'm really excited about making these. My husband loves dark chocolate anything and the blue bunny ice cream, I've heard so much about it but have never had it. That'll change real soon!

Yum.... these sandwiches are some serious chocolate drool worthy work. I know just what you mean about trawling through the supermarket isles to find foods that "say" so much & spark memories of celebrations.
