Ever since right before Thanksgiving, I have been thinking about getting healthier in terms of what I eat. I mean, I ingest a lot of junk into my body. From the kind of sweets I eat, to the kind of fats and oils I use on my food — honestly it is a bit ridiculous. So I started doing research on ways that I could add flavor to my food and make it taste good without sacrificing what I love. That is what led me to this very easy Lemon and Garlic Pasta.
I was out doing my regular grocery shopping at Walmart. I was preparing for the holiday meal, so I knew the center aisle of the store would have everything I needed to make my desserts. What I didn't expect to find there was Star Butter Olive Oil.
I love olive oil anyway, but to have olive oil with butter already in it saves me the calories of cooking with BOTH olive oil and butter. Olive oil is a healthy fat we should be eating, but mixing it with butter for pasta is usually how I have always fixed a dish like the one here, but doing so makes it SUPER fatty — and not very healthy.
Since this olive oil is butter flavored, it gives me the taste I am looking for without the extra fat of the butter. Oh — and did I mention that the Star Butter Flavored Olive Oil is gluten free too? That is another win 🙂
This meal is SUPER easy and only calls for 4 simple ingredients —
Notice that there are no creams, no butters, or anything like that — just pasta, olive oil, lemon, and garlic. 4 simple ingredients to make a very delicious dish.
Now while this is pretty healthy (cause we all need a bit of carbs in our diet), I could have made it even healthier by choosing whole wheat pasta which I think I will do the next time I fix this dish.
- 1 box of mini bow tie pasta
- 2 lemons
- 4 cloves of garlic
- STAR Butter Flavored Olive Oil
- salt and pepper to taste
- cilantro --optional
- Boil your pasta according to package directions.
- While the pasta is boiling, zest your lemons. Once zested, slice them and squeeze the juice into a glass.
- Peel and mince your garlic.
- In a saute pan, add 1 teaspoon of STAR Olive Oil and saute your garlic until fragrant and toasted but not burnt.
- Add in lemon juice, salt, and pepper.
- Once the pasta is done, drain it, leaving behind 1/2 cup of pasta water.
- Add your garlic and lemon juice sauce.
- Drizzle on a little more olive oil.
- Taste -- season with salt and pepper if you like.
- Top with your favorite chopped herb and enjoy
While my pasta was cooking, I cooked my garlic in the olive oil.
The butter flavoring in this delicious gluten free oil made all the difference in the world.
Wanna know my secret for amazing pasta?
After you drain the pasta, drizzle more oil on it. This does two things — keeps the pasta from sticking to each other and also adds extra flavor.
I can envision using this delicious butter flavored oil on shrimp, chicken, and of course a yummy salad! I am so over all the fatty laden holiday food. For me this year, I think I will find ways like this to bring on the flavor and watch my diet.
