Pecan Pie Bars – Baking to Make a Difference

Sharing is caring!

I was sent a complimentary gift pack from Karo Syrup and Fleischmann's Yeast in exchange for posting a recipe and the information in this blog post. No other compensation was received. All opinions are 100% my own.

I love baking things and delivering them to people when they are under the weather. Baking for a cause is my small way of giving back. This past week, I decided to try my hand at making Pecan Pie Bars because I plan on using this recipe for a baking cause that is coming up that I am passionate about.

Ingredients

Cookie Crust

  • 3 cups all-purpose flour
  • 1/2 cup white sugar
  • 1/2 teaspoon salt
  • 1 cup margarine
  • 4 eggs

Pecan Topping

  • 1 1/2 cups Karo light corn syrup
  • 1 1/2 cups white sugar
  • 3 tablespoons margarine, melted
  • 1 1/2 teaspoons vanilla extract
  • 2 1/2 cups chopped pecans

Instructions

  1. Preheat oven to 350 degrees F. Lightly grease a 10x15 inch jellyroll pan.
  2. In a large bowl, stir together the flour, 1/2 cup sugar, and salt. Cut in 1 cup of margarine until mixture resembles coarse crumbs. Sprinkle the mixture evenly over the prepared pan, and press in firmly.
  3. Bake for 20 minutes in the preheated oven.
  4. While the crust is baking, prepare the filling. In a large bowl mix together the eggs, corn syrup, 1 1/2 cups sugar, 3 tablespoons margarine, and vanilla until smooth. Stir in the chopped pecans. Spread the filling evenly over the crust as soon as it comes out of the oven.
  5. Bake for 25 minutes in the preheated oven, or until set. Allow to cool completely on a wire rack before slicing into bars.

This year, Fleischmann’s Yeast, Fleischmann’s Simply Homemade Baking Mixes and Karo Syrup – trusted baking products that have been kitchen staples for more than 100 years – launched the Baking A Difference campaign to benefit Share Our Strength’s No Kid Hungry campaign to help end childhood hunger in America.

I cannot stand to see kids go hungry. It kills me if I think a kid might be starving. For that, I am teaming up with Joy the Baker to help end all the childhood hunger in America. Would you like to help?

How I am helping…  I joined No Kid Hungry alongside Joy the Baker, who has teamed up with Fleischmann’s and Karo Syrup, by Baking A Difference in my kitchen by coming up with a spin on pecan pie — I turned it into bars.  This is a recipe that all kids would love.
