I have had SO many people ask me what my secret is for moist and juicy chicken. Ever since I won our end of the summer cookoff at church, my email, phone and facebook have been blown up with questions — so I thought I would share my secret with you!
The secret is really no secret at all, but doing this one little step did land me first place at our Grilled Chicken cook off — along with my award winning sauce I made.
I have been using this secret for a few years now and since we got our grill this summer, I have done a TON of grilled chicken — perfecting the sauce, the seasoning, and of course, the tenderness of the chicken.
So — here's the secret:
Brine the chicken.
Yep! I told you it was a little bitty secret. So — for those of you who have never heard of brining, all that means is that you are going to soak your chicken overnight in a bowl with a salt and sugar mixture. This concoction is what makes your chicken succulent and moist. Not only does it make your chicken moist but it also adds a ton of flavor to your meat.
My Brine Recipe
You will need —
- 6 cups of water
- 1/2 cup of kosher salt
- 1/4 cup of brown sugar
Mix all of this together and then place your chicken in a large bowl. Then take your brine and pour over your chicken. Cover it with plastic wrap and place in the refrigerator for at least 24 hours.
My Award Winning BBQ Sauce
To make my delicious award winning bbq sauce you will need —
- 1 jar of orange marmalade
- 1/3 cup of siracha
- 1/3 cup of honey
- 1 tablespoon of kosher salt (or more to taste)
- 1 teaspoon of Lawry's Garlic Salt
Mix all together in a saucepan and heat until hot. Do not spread on chicken until you have cooked both sides. Each side must have charred grill marks before you start slathering on the sauce.
Here is one more tip for you —
Never let your chicken temperature rise above 150 degrees. When you take meat off of the grill, it still continues cooking. If you take it off at 150, by the time it finishes completely cooking, you are right at 160 degrees which is the perfect cooking temp for chicken.
