Meatball sandwiches are such a great lunchtime treat at the weekend – warm, meaty, filling and delicious. I had been looking for a new meatball sandwich recipe that is easier to make than the previous one I used to use. That’s why I was so happy when I came across the Perfect Meatball Sandwich recipe. It even includes a simple homemade marinara sauce!
The recipe is written in such a clear way with pictures to guide every step – I couldn’t wait to try it. As you know, I love to double up meals for my family and this recipe provided the perfect opportunity as it calls for pre-cooked meatballs.
I got the opportunity last Friday night when I made meatballs for dinner and I deliberately cooked a double batch so that we could have meatball sandwiches for lunch on Saturday.
The cook.me recipe starts out with a recipe for the homemade marinara sauce which I made by simmering tomatoes with sautéd garlic, some water, salt, sugar, oregano, red pepper flakes, and basil. To assemble the sandwiches, I buttered 4 French rolls and sprinkled them with garlic powder before baking them in the oven until golden.
I added the marinara sauce to both sides of each roll and placed meatballs on the marinara sauce before topping each sub with mozzarella and baking them until the cheese melts.
