For a Bistro Brunch Burger, you’ll need:

  • Ground beef
  • Salt and black pepper
  • Sharp cheddar cheese
  • Bacon
  • Eggs
  • Homemade basil pesto
  • Ciabatta rolls

You can use your favorite ground beef for the burgers. An 80/20 blend is a great choice because the extra fat keeps the burgers juicy while they're cooking on the grill.

Homemade Basil Pesto

Homemade pesto really makes this burger shine. If you already have a favorite basil pesto recipe, use it here.

A classic homemade pesto made with fresh basil, Parmesan cheese, garlic, pine nuts or walnuts, olive oil, salt, and pepper is perfect.

Make the pesto ahead of time and keep it in the refrigerator until you're ready to assemble the burgers.

How to Make a Bistro Brunch Burger

Start by cooking the bacon until it is nice and crispy. Transfer it to a paper towel-lined plate and set it aside while you prepare the rest of the burger.

Divide the ground beef into equal portions and gently form them into burger patties. Try not to overwork the meat because that can make the finished burgers tough.

Season both sides generously with salt and pepper.

Preheat your grill to medium-high heat and cook the burgers until they reach your preferred level of doneness. During the last minute or two of cooking, place a slice of sharp cheddar cheese over each burger and close the grill lid so the cheese can melt.

While the burgers are grilling, slice the ciabatta rolls in half. Brush the cut sides with a little butter or olive oil and toast them until golden and lightly crisp.

Spread a generous layer of homemade basil pesto onto the bottom half of each toasted ciabatta roll.

Place the top of the toasted ciabatta roll over everything and serve immediately.

You'll definitely want a few extra napkins for this one!

What to Serve With Brunch Burgers

Because this burger already has so many rich flavors, I like to keep the sides fairly simple. Try serving it with:

  • French fries
  • Sweet potato fries
  • Fresh fruit
  • A simple green salad
  • Potato wedges
  • Onion rings
  • Pasta salad

For an actual brunch, crispy breakfast potatoes and fresh fruit would be especially delicious alongside these burgers.

Tips for the Best Burger

Don't press down on the burgers while they're grilling. Pressing them with your spatula pushes out all those delicious juices.

Toast the ciabatta. This isn't a step I would skip. Toasting helps keep the bread from getting soggy once you add the pesto and runny egg.

Use sharp cheddar. There are several big flavors happening in this burger, so you want a cheese that won't disappear. Sharp cheddar stands up beautifully to the pesto, bacon, and beef.

Make the pesto ahead of time. Having the pesto ready makes these burgers incredibly easy to put together.

Instructions

  1. Divide the ground beef into 4 equal portions and gently form into burger patties.
  2. Season both sides with salt and pepper.
  3. Preheat the grill to medium-high heat. Grill the burgers until cooked to your desired doneness.
  4. During the last 1–2 minutes of cooking, top each burger with a slice of sharp cheddar. Close the grill and allow the cheese to melt.
  5. Brush the cut sides of the ciabatta rolls with butter or olive oil. Toast on the grill until lightly golden.
  6. Fry the eggs in a skillet until the whites are set and the yolks are cooked to your preference.
  7. Spread basil pesto on the bottom half of each toasted ciabatta roll.
  8. Add the cheddar-topped burger, 2 slices of crispy bacon, and a fried egg.

Notes
