If you like a thicker chowder, you don't necessarily need to add more flour.

You can also use an immersion blender directly in the pot. Just give the soup a few quick pulses. You still want plenty of whole corn kernels and chunks of potato throughout the chowder.

Cook several slices of chopped bacon directly in your soup pot until crispy. Remove the bacon and place it on a paper towel-lined plate.

Frozen corn is actually one of my favorite options for Creamy Corn Chowder because you don't have to wait for fresh corn season. You can generally add frozen corn directly to the soup without thawing it first.

Canned corn works, too. Just drain it well before adding it to the chowder.

During the summer, though, definitely give fresh sweet corn a try. Cut the kernels directly from the cob and add them to the soup.

Make It With Leftover Corn

Simply slice the cooked kernels from the cob and add them toward the end of the cooking process. Since they're already cooked, they only need enough time to heat through.

  • 1 cup shredded cheddar cheese, optional

Instructions

  1. Add the chopped bacon to a large Dutch oven or soup pot. Cook over medium heat until crisp. Remove the bacon with a slotted spoon and set aside. Leave about 1 tablespoon of bacon grease in the pot.
  2. Add the butter and diced onion. Cook for 4–5 minutes, or until the onion is soft and translucent. Add the garlic and cook for another 30 seconds.
  3. Sprinkle the flour over the onions and stir until everything is well coated. Cook for about 1 minute.
  4. Slowly pour in the chicken broth, stirring constantly to prevent lumps.
  5. Add the potatoes, corn, salt, pepper, thyme, and smoked paprika. Bring the soup to a gentle boil.
  6. Reduce the heat to medium-low, cover, and simmer for 15–20 minutes, or until the potatoes are fork-tender.
  7. For a thicker, creamier chowder, use an immersion blender to blend a portion of the soup directly in the pot. You can also transfer about 2 cups of the soup to a blender, blend until smooth, and return it to the pot.
  8. Stir in the heavy cream. If using cheddar cheese, add it now and stir over low heat until melted. Do not allow the chowder to come to a hard boil once the cream has been added.
  9. Taste and adjust the salt and pepper as needed.
    Ladle into bowls and top with the crispy bacon, shredded cheddar cheese, and fresh chopped chives.
