How to Make These Delicious Spiced Nuts
Here is my tip when you make these though — use parchment paper. It makes the clean up so much easier.
The run-off of the spice mixture gets super sticky and will be hard to clean off in just a regular pan, but if you use a Silpat or parchment paper — cleanup will be a breeze.
It's really easy — just mix up your ingredients, and then pour your nuts into the bowl and make sure to coat everything well.

Then, spread on a parchment lined baking sheet. Bake in the oven, making sure to turn the nuts ever so often to make sure that they get evenly cooked.

Once they come out of the oven, make sure to stir them one last time and then allow them to cool.
This will let the seasoning mix harden on the nuts. You can store them in an airtight container. I place mine in the fridge and they last for about a month. I use them to top salads or sometimes, I just snack on them!

Ingredients
- 1 large egg white
- 1/4 cup sugar
- 1 teaspoon salt
- 1/2 teaspoon chili powder
- 1/4 teaspoon cinnamon
- 1/2 teaspoon ground cumin
- 1 1/4 teaspoons cayenne pepper
- 2 1/2 cups pecan halves, or assorted nuts, such as cashews, walnuts, or almonds (we used pecans)
Instructions
- Preheat oven to 300 degrees. Beat egg white until soft and foamy. Combine all remaining ingredients except pecans; whisk into egg white.
- Stir in pecans until well coated; spread mixture in a single layer onto a baking pan lined with parchment paper.
- Bake pecans for 15 minutes, then remove from oven. Using a metal spatula, toss, stir, and separate nuts.
- Reduce oven to 250 degrees and return nuts to bake until medium brown, about 10 minutes. Remove from oven; toss, and stir again.
- Place a wire cookie tray inside another baking pan and transfer your nuts to that wire tray to cool off. Break into single nuts once they have cooled all the way.
