I am sure many of us have a garden planted this year. If so, then this Summertime Quinoa Salad is right up your alley! Delicious healthy eating, all clean, and great for resetting your body if it is feeling sluggish. I found this recipe in a magazine, but tweaked it a little to make it my own.
This salad is simply refreshing and uses easy ingredients. All of them are pantry staples either in your cabinet or refrigerator.
Start with these items —
- 2 cups of Quinoa
- 1 Cucumber seeded and diced
- 1/2 a red onion diced
- 1 clove of garlic, chopped
- 1/2 cup parsley, chopped
- 1 lemon. juiced
- 2 teaspoons of mustard
- 3/4 cup of olive oil
- salt
- pepper
Cook your quinoa according to package directions and then add in all your diced items — cucumber, red onion, and parsley.
Mix together your dressing ingredients — olive oil, mustard, garlic, lemon juice, salt, and pepper. Then pour it over the salad and mix it together.
Place in the refrigerator until chilled. Serve with your favorite grilled meat for the perfect healthy meal!
