If you love a good smashburger but also happen to be a taco fan, these Blackstone Smashburger Tacos give you the best of both worlds. They’re juicy, cheesy, crispy around the edges, and loaded with fresh toppings.

The best part is that everything cooks quickly right on the Blackstone griddle. Ground beef is smashed directly onto a flour tortilla and cooked until it develops those delicious crispy edges.

Then I add shredded cheese and finish each taco with fresh sour cream, cilantro, avocado, diced tomatoes, and a squeeze of fresh lime juice.

These are perfect for an easy weeknight dinner, summer cookout, or anytime you want to fire up the Blackstone.

Smashburger tacos have become one of my favorite things to make on the Blackstone because they're so simple but packed with flavor.

The ground beef gets that classic Blackstone smashburger crust while the tortilla becomes warm and slightly crispy. Add melted cheese and all those cool, fresh toppings, and you have one seriously delicious taco.

They're also easy to customize. Set out all the toppings and let everyone build their own.

Ingredients

For these Blackstone Smashburger Tacos, you'll need:

  • Ground beef
  • Small flour tortillas
  • Salt
  • Black pepper
  • Taco Seasoning
  • Shredded cheese
  • Sour cream
  • Fresh cilantro
  • Avocado
  • Diced tomatoes
  • Fresh lime wedges

You can use your favorite shredded cheese here. Cheddar, Monterey Jack, Mexican blend, or Pepper Jack would all be delicious.

How to Make Blackstone Smashburger Tacos

Start by preheating your Blackstone griddle over medium-high heat.

Divide the ground beef into small portions. You don't have to shape them into perfect burger patties because we're going to smash them directly onto the tortillas.

Place a portion of ground beef on one side of each flour tortilla. Spread or press the beef out so that it forms a thin, even layer that reaches almost to the edges of the tortilla. Season the beef with salt and pepper, and a little taco seasoning.

Place the tortillas beef-side down onto the hot Blackstone.

Using your burger press or spatula, firmly press the tortilla down so that the ground beef gets plenty of contact with the hot griddle. That's what gives you those crispy, caramelized smashburger edges.

Let the beef cook until it develops a nice crust and is cooked through.

Flip the taco so the tortilla side is against the griddle. Sprinkle shredded cheese over the hot beef and allow it to melt while the tortilla gets lightly toasted.

Once the cheese is melted, remove the tacos from the Blackstone.

Add the Fresh Toppings

Now comes my favorite part.

Top each smashburger taco with:

Fresh sour cream, chopped cilantro, sliced or diced avocado, shredded cheese, diced tomatoes, and a generous squeeze of fresh lime juice.

That squeeze of lime really brings everything together. The acidity cuts through the richness of the ground beef and cheese, while the avocado and sour cream add a cool, creamy contrast.

Fold them up and dig in!

Tips for the Best Blackstone Smashburger Tacos

Make sure your Blackstone is nice and hot before adding the tacos. You want to hear that beef sizzle as soon as it hits the griddle.

Keep the layer of ground beef thin. A thin layer cooks quickly and gives you more of those crispy smashburger edges.

Don't use tortillas that are too large. Smaller flour tortillas are easier to flip and make the perfect handheld smashburger taco.

And don't skip the fresh lime. It might seem like a small addition, but it makes a huge difference in the finished taco.

What Else Can I Put on Smashburger Tacos?

One of the reasons these are so much fun is that you can change the toppings depending on what you have on hand.

Try adding shredded lettuce, pickled jalapeños, grilled onions, salsa, pico de gallo, hot sauce, sliced green onions, or even a drizzle of your favorite burger sauce.

You could also turn these into more traditional cheeseburger tacos by topping them with pickles, onions, lettuce, tomatoes, and burger sauce.

What to Serve With Blackstone Smashburger Tacos

Since you've already got the Blackstone fired up, make your entire meal on the griddle.

Serve these tacos alongside Blackstone Street corn, grilled vegetables, crispy potatoes, or even a big batch of Blackstone fried potatoes.

Chips with salsa, guacamole, or queso also make an easy side.

Can I Make These Ahead of Time?

These smashburger tacos are definitely best served straight from the Blackstone while the beef is hot, the cheese is melted, and the tortillas still have that slight crispness.

However, you can prep everything ahead of time.

Dice your tomatoes, chop the cilantro, shred the cheese, cut the limes, and portion out the ground beef before you start cooking. Then all you have to do is assemble and cook the tacos.

Wait until right before serving to cut the avocado so it doesn't turn brown.

These Blackstone Smashburger Tacos are one of those meals that prove you don't need a long ingredient list to make something everyone will love.

  • 8 small flour tortillas
  • Salt and black pepper, to taste
  • Taco Seasoning
  • 1 to 1 1/2 cups shredded cheese
  • Sour cream, for topping
  • 1 avocado, sliced or diced
  • 1 cup diced tomatoes
  • Fresh cilantro, chopped
  • 1 lime, cut into wedges

Instructions

  1. Preheat the Blackstone griddle over medium-high heat.
  2. Divide the ground beef into 8 equal portions.
  3. Place one portion of beef onto each flour tortilla and press it into a thin layer covering most of the tortilla. Season with salt and pepper.
  4. Place each tortilla beef-side down on the hot griddle.
  5. Press firmly with a burger press or spatula and cook until the beef develops a browned, crispy crust and is cooked through.
  6. Flip so the tortilla is against the griddle.
  7. Sprinkle shredded cheese over the cooked beef and allow it to melt while the tortilla lightly toasts.
  8. Remove from the Blackstone.
  9. Top with sour cream, fresh cilantro, avocado, diced tomatoes, and additional shredded cheese if desired.
  10. Finish with a squeeze of fresh lime juice and serve immediately.
