Cooking on my Blackstone is one of my favorite things to do. This Blackstone Mexican Street Corn is now my new favorite way to make corn of any kind.
This makes the perfect side dish for Taco Tuesday, fajitas, or a Mexican food night! Don't forget to make a batch of my Mexican Cheese Dip too!
You can use canned corn or fresh-shucked corn to make this on the griddle. Clean-up and cooking are both a breeze for this Mexican street corn, and you can spice it up any way you want.

Making this recipe is simple and easy. The Blackstone Griddle does all the work! Here's how I make this delicious corn recipe.
How to Make Blackstone Mexican Street Corn
Start by heating your Blackstone and cooking your corn on the griddle. I used canned corn, but you can use fresh corn if you want.

While the corn is cooking, mix up your spice mixture. Set it aside.
For the corn, I like to allow mine to char some on the Blackstone before I do anything else. The char is one of the best parts in my opinion.
Once you get the perfect color to your corn, pour on your seasoning mixture and continue mixing until everything is incorporated.

Pour the street corn into a bowl — and then, my secret ingredient gets put on top. My secret ingredient is Tajin! It just does something to the street corn that makes it sing.

Blackstone Mexican Street Corn

Take canned corn to the next level by throwing it on the Blackstone. Add some spices and you will get the most amazing street corn ever.
Ingredients
- 2 Cans Whole Kernel Corn
- 1/4 cup of melted Butter
- 2 Tbsp Mayonnaise
- 2 Tbsp Sour Cream
- 1 1/2 teaspoons of Lime Juice
- 1/2 teaspoon of Chili Powder
- Dash Of Cayenne Pepper
- Salt
- Pepper
- Tajin
- Chopped Fresh Cilantro
Instructions
Open the cans of corn and strain them. Set them aside.
Mix up the spices and set them aside.
Fire up your Blackstone Griddle.
Once your griddle is hot and ready, add the butter and spread your corn out. Allow the corn to cook for several minutes before moving it around.
Once the corn has charred a bit, add the spice mixture and mix well.
Remove from the Blackstone and add to a bowl. Top with Tajin and chopped cilantro.
Serve and enjoy!
