Y'all, my mint is going crazy this year. We pulled up most of it last year, thinking it wasn't going to grow back.

During the spring, as we were checking out our flower beds and making plans for what herbs we were going to plant, we discovered one small mint plant had survived.

My daughter planted it in a pot all by itself, and now you should see it! It's completely taking over that one pot.

Mint is one of the easiest herbs to grow, but you have to really keep it maintained or it will take over everything. We have used it to make other meals and drinks like my Mocktail Mojitos, and I recently used it with watermelon and feta (which was SO good!).
How to Make Blackberry Mint Spritzer

For starters, you need to make a Mint Simple Syrup. This is as easy as boiling 1 cup of water with 1 cup of sugar. Add a bunch of mint leaves, as that will heighten the flavor of the simple syrup.

Then in your Nutra Ninja, add the simple syrup and about 1 cup of blackberries (more if you want a deeper blackberry flavor).
Blend until you get it all blended together.

Now, run it through a fine mesh strainer to remove any seeds. Pour into a mason jar glass and top it off with Sprite Zero. Top it off with extra blackberries and a sprig of mint for a beautiful effect.

Blackberry Mint Spritzer
This refreshing summer drink is full of blackberry flavor.
Ingredients
- 1 cup of blackberries
- 1 cup of water
- 1 cup of sugar
- 1 cup of mint leaves
- Sprite Zero
Instructions
- Start by making a simple syrup by mixing together 1 cup of water, 1 cup of sugar and 1 cup of mint leaves. Place on stove on high heat and boil for 1-2 minutes. Remove from heat and let cool.
- In a food processor, add simple syrup and 1 cup of blackberries. Pulse until all combined. Run through a mesh strainer to remove any seeds.
- Pour into a glass and top with Sprite Zero. Garnish with more blackberries and a mint sprig.
- Enjoy!
