I discovered some new recipes for carrots when I was looking for a new way to make them other than boiling them on the stovetop straight out of the can with brown sugar.
I had 2 bunches of regular carrots that were at the point of being thrown away, so in my effort to use up and not waste any food these days, I tweaked an online recipe until I came up with these flavorful tender carrots. This is the perfect side dish for any meal that uses simple ingredients.
Carrots are relatively inexpensive at the store — especially if you are shopping at ALDI. Most of the time, a bag of carrots costs me like .79 and lasts for several meals. That means if you are like me, you are always on the hunt for a delicious carrots recipe to wow your family with.
How to Make Brown Butter Honey Garlic Carrots
For this recipe, you need the following ingredients
- 2 lb large sweet carrots, cut into 2-inch pieces, (the type of carrots you use is up to you — whole carrots, baby carrots, sliced carrots)
- 1/2 cup butter
- 4 tbsp honey
- 2 cloves garlic chopped (you can use garlic powder if you prefer)
- salt and pepper for garnish
To start with, you need to make sure to brown the butter in a medium saucepan. All this means is that you melt butter in a saucepan over medium heat until it just starts to turn color and the milk solids have been cooked away. Keep a close eye on the butter. If you let it go too long you will burn it. The cooking time varies so you have to really watch it. Nutty brown butter has the most amazing nutty flavor and enhances anything you drizzle.
Next, peel and chop your carrots and toss them in a large bowl. For the large carrots, I halve them and chop the halves in half. Smaller carrots get left whole.
The carrots get tossed in this delicious garlic-infused butter mixture and roast in an even layer on a large baking sheet in the oven with some olive oil. I love to roast my veggies because it gives them a tender center and a crisp edge, not to mention those adorable charred crunchy spots!
It only takes about 15 minutes until these carrots are done, and believe me when I say they are SO GOOD and will be the best roasted carrots you have ever made. Once you plate in your serving dish, top the carrots with some melted butter at the end and top with grated Parmesan cheese and fresh herbs.
They make such a perfect side to your next meal. I promise that you will agree that these carrots are the best that you have ever had! Even the picky eater in the family will love them.
Storing Carrots
Store the leftover brown butter carrots in an airtight container and warm the next day to go with your leftovers.

Brown Butter Honey Garlic Roasted Carrots
This is the perfect side dish that takes 15 minutes or less to prepare.
Ingredients
- 2 lb large carrots, cut into 2 inch pieces , (baby carrots will also work)
- 1/2 cup butter
- 4 tbsp honey
- 2 cloves garlic chopped
- salt and pepper for garnish
Instructions
- Preheat oven to 425 degrees. In a medium saucepan add the butter and cook over medium high heat. Continue to whisk for a few minutes until the butter starts to become frothy and brown. Add the honey and garlic and remove from heat.
- In a large bowl add the carrots and drizzle the sauce on top. Toss until coated and spread evenly on a large baking sheet. Season with salt and pepper.
- Bake for 15-20 minutes or until carrots are tender. Transfer to a serving dish and serve with your favorite meat dish!
