When it comes to baking, few things feel as indulgent as buttery, flaky homemade puff pastry. While store-bought pastry is convenient, nothing compares to the rich flavor and melt-in-your-mouth layers of the homemade version. The good news? With a little patience, you can master this classic technique right in your own kitchen.

What is Puff Pastry?

Puff pastry (also known as pâte feuilletée) is a light, buttery dough that rises into hundreds of delicate layers when baked. It’s made by folding butter into dough repeatedly, creating thin alternating layers of dough and butter. When it hits the oven, steam forms between the layers, puffing them up beautifully.

Ingredients You’ll Need

  • 2 cups all-purpose flour
  • 1 tsp salt
  • 1 1/4 cup cold salted butter (2 1/4 sticks), cut into cubes
  • 2/3 cup cold water

Step-by-Step Instructions

Step 1: Make the Dough

In a large bowl, combine flour and salt. Add the cubed butter and massage it into the flour until it resembles coarse crumbs. Stir in the cold water until the dough comes together. Shape it into a rough rectangle, wrap it in plastic wrap, and chill for 30 minutes.

Step 2: Roll and Fold (Turns)

This is where puff pastry gets its signature layers.

  1. Roll the dough into a long rectangle.
  2. Fold the top third down and the bottom third up (like folding a letter).
  3. Rotate the dough 90 degrees, then roll and fold again.

This process is called a “turn.” After two turns, wrap the dough and chill for at least 30 minutes. Repeat until you’ve done four turns total, chilling between every two turns.

Step 3: Rest and Use

Once all the folds are complete, wrap the puff pastry and chill for at least an hour before using. At this point, it’s ready for sweet or savory recipes—tarts, my cream cheese danish, pinwheels, pot pies, and more.

Tips for Success

  • Keep everything cold. Warm butter will leak and ruin the layers.
  • Don’t overwork the dough, or it can become tough.
  • Be patient with chilling times—resting is key for flaky results.
