How to Fold Palmiers
Palmiers have a fun elephant ear shape. To be able to get that shape, you need to fold the dough correctly.
I fold almost 1″ from the top edge and 1″ from the bottom edge. Later, I fold 1″ the top and bottom again. Shortly, I fold two times from the top, and two times from the bottom equally until they meet almost in the center.
There will be a little gap in the middle, so when you fold one side over another they meet each other

Cheesy Garlic Herb Palmiers
Cheesy Garlic Herb Palmiers are perfect as holiday party snacks, and require only 6 ingredients to make! An easy recipe, loaded with zesty flavor!
Ingredients
- 2 sheets frozen puff pastry, thawed
- 1 1/4 cups Finely Shredded Extra Sharp Cheddar Cheese
- 2-3 cloves garlic minced
- 1 tablespoon fresh chopped rosemary
- 1 tablespoon fresh chopped thyme
- 1 egg, beaten
- Salt and pepper
Instructions
Lay each piece of puff pastry on a floured work surface and roll them lightly to remove the fold lines. Mix minced garlic, rosemary, and thyme in a small bowl.
Sprinkle the herb mix over the puff pastry sheets. Then sprinkle both sheets evenly with the cheese.
Fold the pastry sheets in for 1/4 of the width on both sides. Fold in again so that the dough meets in the middle.
Brush the folds of the puff pastry rolls with a beaten egg. Fold one more time. Wrap the roll in wax paper and place the rolls in the refrigerator for at least 30 minutes to chill before cutting.
When ready to bake, preheat the oven to 450 degrees F. Carefully slice each roll into 12 - 1/2-inch slices and lay them flat on parchment paper-lined baking sheets. Bake for 12-14 minutes, until golden.
