Easy mini fruit pizzas are the perfect summertime snack. Sweet sugar cookies are topped with a creamy sauce and then sprinkled with fresh fruit and fresh mint.

This dessert is a simple and easy sugar cookie slathered with a decadent cream cheese dip and then topped with fresh fruit.

Seriously -- these cookies will be gone faster than you can put them together!

I love this recipe so much because not only is it super easy to make, but the kids will LOVE decorating their cookie pizzas with whatever fruits they like.

How to Make Easy Mini Fruit Pizzas

To make these Easy Mini Fruit Pizzas, you only need a few simple ingredients --

  • ~Cream Cheese
  • ~Heavy Cream
  • ~Fresh Fruit
  • ~Sugar Cookies

You can make your sugar cookie dough if you want, but I found that just using store-bought dough is just as simple and easy.

For starters, you need to bake your sugar cookies in the oven according to package directions.

Once they get done cooking, move them to a cookie rack or a plate to completely cool before frosting. If you put the cream cheese mixture on the cookie before it is completely cooled down, it will melt and run off.

While the cookies are cooling, you are going to make your cream cheese mixture.

Making the Cream Cheese Frosting for Easy Mini Fruit Pizzas

For the cream cheese frosting, you will need

  • 1 8-oz package cream cheese, softened
  • ½ cup of powdered sugar
  • 1 cup heavy cream
  • ½ teaspoon vanilla

Beat the cream cheese and the powdered sugar together. I was out of powdered sugar, so I took some of my Dixie Crystals sugar and ran it through my food processor until I got a very fine sugar substance and made my powdered sugar. It takes just a few minutes to make your own if you are out!

Now, add in the heavy cream and vanilla and beat together until smooth. Spread it on top of the cookies. I also use this same cream cheese mixture when I make my Cheesecake Stuffed Strawberries as well.

Now, using your favorite fruit, chop and dice it and top your cookies with it. For us, we used blueberries, blackberries, kiwi, and grapes. I have used strawberries, pineapples, and more in the past. The possibilities are endless.

Then, for the perfect ending to a delicious cookie, mince some fresh mint and sprinkle on top. Serve to your family and friends for the perfect summer dessert!

These easy mini fruit pizzas will be the perfect dessert for your summer get togethers. They take no time to make and taste amazing!

Total Time 15 minutes

Ingredients

  • 1 package of refrigerated cookie dough
  • 1 8 oz package cream cheese, softened
  • ½ cup powdered sugar
  • 1 cup heavy cream
  • ½ teaspoon vanilla
  • Fresh fruit for topping the cookies

Instructions

  • Bake cookies according to package directions.
  • Remove from the hot pan and allow them to cool completely.
  • While cookies are cooling, you can make the cream cheese frosting --
  • Beat the cream cheese with the sugar until light and smooth.
  • Pour in the heavy cream.
  • Beginning with the mixer at a slow speed, start to beat in the cream. Increase the speed of the mixer gradually until the mixture thickens.
  • Add in vanilla and mix. If your cream cheese mixture is too thin, place it in the fridge until it firms up before frosting cookies.
  • Spread the cookies with a bit of cream cheese and top with fresh fruit and mint. These are best within a day or two of making them.
