These Blackstone Garlic Bread Smashburgers are the ultimate combination of two favorites — crispy smashburgers and buttery garlic bread! Juicy ground beef seasoned with my roasted fresh garlic, salt, and pepper is smashed right on the Blackstone until those delicious crispy edges form. Then each burger gets topped with melty provolone cheese and sandwiched between two golden slices of garlic bread.

Why You'll Love These Blackstone Smashburgers

The Blackstone is one of my favorite ways to cook burgers because you can get that gorgeous crust that's hard to duplicate on a regular grill.

When you place a ball of ground beef on the screaming-hot griddle and smash it thin, more of the meat comes in contact with the cooking surface. That's what creates those crispy, caramelized edges that make a smashburger so good.

For these burgers, we're taking things a step further.

Instead of regular buns, we're using frozen garlic bread slices. They're buttery, crispy, and sturdy enough to hold a juicy smashburger.

Add roasted garlic directly to the beef and top everything with provolone cheese, and you've got one seriously delicious Blackstone burger.

Ingredients for Blackstone Garlic Bread Smashburgers

You don't need a long list of ingredients for these burgers.

  • 1 pound ground beef
  • 2 to 3 cloves roasted fresh garlic, mashed
  • Salt, to taste
  • Black pepper, to taste
  • 4 slices provolone cheese
  • 8 slices frozen garlic bread

For smashburgers, I prefer using 80/20 ground beef. You want some fat in the beef because it adds flavor and helps create that crispy crust on the Blackstone.

How to Make Garlic Bread Smashburgers on the Blackstone

Step 1: Prepare the Ground Beef

Add the ground beef to a bowl along with the mashed roasted garlic, salt, and black pepper.

Gently mix everything together, being careful not to overwork the beef.

Divide the meat into four equal portions and loosely roll each portion into a ball. Don't pack the beef tightly. Keeping the meat loose helps create those irregular, crispy edges when you smash it onto the griddle.

Step 2: Heat the Blackstone

Preheat your Blackstone griddle over medium-high to high heat.

You want the cooking surface nice and hot before adding the beef. A hot griddle is one of the secrets to getting that beautiful brown crust on your smashburgers.

Lightly oil the griddle if needed.

Step 3: Cook the Garlic Bread

Prepare the frozen garlic bread according to the package directions, or cook it right on your Blackstone.

If cooking the garlic bread on the griddle, place the slices on a lower-heat section of the Blackstone and cook until they're heated through and golden brown.

Watch them carefully because garlic bread can go from perfectly toasted to overly browned pretty quickly.

Move the toasted garlic bread to the side and keep it warm while you cook the burgers.

Step 4: Smash the Burgers

Place the ground beef balls on the hot Blackstone, leaving plenty of space between each one.

Place a small square of parchment paper over each ball of beef and immediately press down firmly with your burger press or Blackstone spatula.

Smash each burger into a thin patty.

Then leave it alone!

You don't need to keep pressing the burgers while they cook. The initial smash creates plenty of contact with the griddle and allows that delicious crust to form.

Step 5: Flip and Add the Provolone

Cook the burgers until the bottoms are deeply browned and you can see crispy edges forming.

Use a sturdy Blackstone spatula to scrape underneath each patty, making sure you get all those crispy browned bits.

Flip the burgers and immediately add a slice of provolone cheese.

Let the burgers finish cooking until the cheese is melted and the beef reaches a safe internal temperature.

Step 6: Assemble Your Garlic Bread Smashburgers

Now comes the best part.

Place one slice of toasted garlic bread on a plate. Add your cheesy Blackstone smashburger and top it with another piece of garlic bread.

Serve these burgers hot off the griddle while the provolone is still melty and the garlic bread is warm and crispy.

Why Use Garlic Bread Instead of Burger Buns?

Because it's delicious!

Garlic bread gives you everything you'd normally want from a toasted burger bun, but with a lot more flavor.

The outside gets crispy and golden while the inside stays soft enough to soak up some of those delicious burger juices.

It also works especially well with the provolone cheese. Garlic, beef, butter, and provolone have an almost Italian-inspired flavor combination that makes this burger completely different from your typical backyard cheeseburger.

Roasted Garlic Adds Even More Flavor

One of the things that makes my Blackstone Garlic Bread Smashburgers different is adding roasted fresh garlic directly to the ground beef.

Roasted garlic has a much milder flavor than raw garlic. It's soft, slightly sweet, and almost buttery.

Mash the roasted cloves before adding them to your beef so that the garlic gets distributed throughout the burgers.

You get roasted garlic flavor inside the burger and buttery garlic flavor from the bread.

Tips for Making Smashburgers on the Blackstone

Get the Blackstone hot. You need a hot cooking surface to create that signature smashburger crust.

Use 80/20 beef. A little extra fat keeps your burgers juicy and adds flavor.

Keep the beef loose. Don't tightly pack the meat when forming your burger balls.

Smash immediately. Place the beef on the griddle and smash it right away.

Use parchment paper. A small square of parchment between the burger press and beef prevents sticking.

Don't smash twice. Once the burger has been pressed, let it cook. Pressing it again later can squeeze out the juices.

Scrape before flipping. Get your spatula underneath all those crispy browned edges so they stay attached to the burger.

Keep the garlic bread on lower heat. This helps it warm and toast without burning.

These burgers are delicious exactly as written, but there are plenty of ways to change them up.

You could also add crispy bacon, jalapeños, pickles, or a drizzle of your favorite burger sauce.

Can I Make Double Smashburgers?

Absolutely.

Instead of making four larger patties, divide the ground beef into eight smaller balls. Smash and cook them the same way, adding cheese during the final part of cooking.

How Do I Keep the Garlic Bread From Getting Soggy?

The key is to toast the garlic bread until it's nicely golden before assembling the burgers.

You also want to wait until you're ready to eat before putting everything together.

Don't assemble the burgers and let them sit for a long time. The juices from the beef will eventually start soaking into the bread.

These are best eaten straight off the Blackstone.

  1. Preheat the Blackstone griddle over medium-high to high heat.
  2. Add the ground beef, mashed roasted garlic, salt, and pepper to a bowl. Gently mix just until combined.
  3. Divide the beef into 4 equal portions and loosely form each portion into a ball.

  5. Place the beef balls onto the hot section of the griddle, leaving plenty of room between them.
  6. Place a piece of parchment paper over each ball and immediately press firmly with a burger press or sturdy spatula to create a thin patty.
  7. Cook without moving the patties until the bottoms are deeply browned and crispy around the edges, about 2 to 3 minutes.
  8. Scrape underneath each burger with a metal spatula and flip.
  9. Top each burger with a slice of provolone cheese and cook for another 1 to 2 minutes, or until the cheese is melted and the burgers are cooked through.
