This chunky cucumber salsa is so refreshing and a great way to use up all those cucumbers that are busting out of your garden at the present moment.
This salsa goes great with chips, as a topping for tacos, and with other various proteins. If you are like me and are swimming in cucumbers, then this recipe will be a hit for you and will tempt those taste buds! It's the perfect snack on a hot summer day.
I have been eating cucumbers and tomatoes with almost every meal just because we have so many growing in our garden. Honestly, I am ready to pull those plants up to stop the harvest. . .but I won't.
This salsa is a great way to use up those two veggies. It's a lot similar to pico de Gallo but has cucumbers added to it. They are refreshing and add a nice pop to the salsa.
How to Make This Chunky Cucumber Salsa
For this tasty cucumber salsa, you need the following ingredients —
- Fresh Tomatoes: You can use any that you like. I like Roma tomatoes for making salsas.
- Garden Cucumbers: for the cucumber, you can use English cucumbers or garden-fresh cucumbers. You can also use a hothouse cucumber. Either one will offer the same taste.
- Onion: I used white onion for this recipe, but you can use a red onion if you prefer.
- Cilantro: Fresh cilantro is always best for recipes like this
- Jalapenos
- Lime Juice: freshly squeezed lime juice is better than bottles
- Salt and fresh black pepper
Dice up the crisp cucumbers into small pieces. Toss them in a large bowl. Dice up the onions and tomatoes and toss them in the bowl with the cucumbers.
Now, mince up the cilantro and add it to the bowl.
Put on gloves and remove the seeds from the jalapeno pepper. Then, dice it up into small pieces also. Toss in the bowl.
Add the fresh lime juice and the salt and pepper and mix well. Store everything in an airtight container.
This fresh salsa will hold up in the fridge for about 4 days, but who am I kidding? It never lasts that long! We eat it all before it goes bad.

Ingredients
- 3 cups of diced tomatoes
- 2 cups of cucumbers, diced
- 1/2 onion, diced
- 1 jalapeno seeds removed and diced
- 1/2 cup of cilantro minced
- 2 limes, juiced
- salt and pepper to taste
Instructions
- Add all the ingredients to a large bowl and mix well. Taste it and adjust the seasonings as needed.

The recipe says 3 cups of diced cucumbers and the line says 2 cups of cucumbers diced……I’m sure one of those should be tomatoes?

Yes 3 cups of tomatoes and 2 cups of cucumber -- going to fix it now.
