Ingredients
- 1 (12-oz) bag semi-sweet chocolate chips
- 1 stick (½ cup) unsalted butter
- 1 bag (10–12 oz) colored mini marshmallows
- ½ cup chopped walnuts, peanuts, or pecans (optional)
- 1 teaspoon vanilla extract
- 1/2 to 1 cup of shredded sweetened coconut (for rolling)
- Wax paper or parchment paper

Instructions
1. Melt the chocolate mixture
In a medium saucepan over low heat, melt the butter and chocolate chips, stirring constantly until smooth.
Remove from heat and let the mixture cool for about 8–10 minutes — it should be warm, not hot, so the marshmallows don’t melt.
2. Add marshmallows and nuts
Stir in the vanilla extract, then fold in the mini marshmallows and nuts (if using) until everything is well coated in chocolate.
3. Form the logs
Lay out a large sheet of wax or parchment paper and sprinkle on half of the shredded coconut. Spoon half of the mixture onto the paper and then shape it into a log.
Roll the log tightly in the paper, twisting the ends to secure.
Repeat with the second half.
4. Chill
Refrigerate for 2–3 hours, or until completely firm. If you are pressed for time, you can place it in the freezer for 30 minutes to an hour.
5. Slice & serve
Unwrap the chilled logs and then slice into ½-inch rounds — revealing your beautiful “church window” pattern — and enjoy!
