Why You’ll Love These Strawberry Pop-Tarts

  • Made with just a handful of pantry ingredients.
  • Customize them with your favorite jam or filling.
  • No preservatives or artificial ingredients—just wholesome goodness.
  • Fun to make with kids!

I love finding fun recipes like this one that I can make with my grandbabies or even when my daughter wants to get in the kitchen with her twin boys, making food. Those babies are the light of this whole family, and now that they are showing interest in helping with food, we are all about it!

Ingredients Needed

Pastry:

  • 2 cups all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 cup unsalted butter (cold, cubed)
  • 4–6 tablespoons ice water

Filling:

  • ¾ cup strawberry jam or preserves
  • 1 tablespoon cornstarch (optional, for thickening)
  • 1 tablespoon water

Glaze:

  • 1 cup powdered sugar
  • 2 tablespoons milk
  • ½ teaspoon vanilla extract
  • Sprinkles (optional, but fun!)

How to Make Strawberry Pop-Tarts

Step 1: Make the Pastry Dough

In a large bowl, whisk together the flour, sugar, and salt. Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs. Add the ice water, 1 tablespoon at a time, until the dough comes together. Divide into two discs, wrap in plastic wrap, and chill for at least 30 minutes.

Step 2: Prepare the Filling

In a small saucepan, heat the strawberry jam with the cornstarch and water over medium heat until slightly thickened. Let it cool before filling the Pop-Tarts.

Step 3: Assemble the Pop-Tarts

  • Roll out one dough disc on a floured surface and cut into rectangles (about 3×4 inches). I like to use this pastry cutting tool to give my dough the scalloped look like regular poptarts.
  • Place half of the rectangles on a parchment-lined baking sheet.
  • Spoon 1–2 tablespoons of strawberry filling onto each rectangle, leaving room around the edges. Use your finger to dip into water to moisten the edges.
  • Top with another rectangle of dough and press the edges with a fork to seal. Poke a few holes on top with a fork to vent.

Step 4: Bake

Bake at 375°F (190°C) for 20–25 minutes, or until golden brown. Allow to cool completely before glazing.

Step 5: Glaze and Decorate

Whisk together the powdered sugar, milk, and vanilla until smooth. Spread over cooled Pop-Tarts and add sprinkles if desired. Let the glaze set before serving.

Tips & Variations

  • Swap strawberry jam for raspberry, blueberry, or even Nutella!
  • For extra flaky pastry, chill the assembled Pop-Tarts for 15 minutes before baking.
  • Store leftovers in an airtight container at room temperature for 2 days, or refrigerate for up to 5 days.
