Parmesan Crusted Carrots is the perfect winter root vegetable to make when you are craving something healthy and delicious as a side dish. This recipe comes together in 25 minutes and will compliment any protein meal.
My husband and I have doing everything we can to clean up our diet. I found this recipe a while back and it has been a great side dish for us when we have dinners like our Pan Seared Filet Mignon. You can use regular carrots if you want, but I found these tri-colored carrots at Sam's Club this week.

How to Make Parmesan Crusted Carrots
Making these carrots is so easy. That's what makes this recipe one of my favorites.
Start by halving the carrots lengthwise. Throw them in a large mixing bowl. Now, melt two tablespoons of butter.
In the butter add in 1/4 teaspoon of garlic powder, 1/4 teaspoon of salt, and 1/4 teaspoon of black pepper.

Mix the butter mixture well and then pour over the carrots.
Grate 1/2 cup of fresh Parmesan cheese. Sprinkle 1/4 cup of the Parmesan over the carrots and butter. Toss to coat.
Now, line a baking sheet with parchment paper. Sprinkle the remaining Parmesan over the parchment paper. Lay the carrots down in a single layer.
Bake the carrots at 400 degrees for 10 minutes. Take them out and flip them. Be careful because the cheese is piping hot. Cook for another 10 minutes. Remove from the oven and enjoy!

Parmesan Crusted Carrots is the perfect side dish for any meal. They are healthy and come together in less than 30 minutes.
Ingredients
- 12 carrots, halved lengthwise
- 1/2 cup of freshly grated Parmesan Cheese
- 2 tablespoons of butter melted
- 1/4 teaspoon of garlic powder
- 1/4 teasppon of salt
- 1/4 teaspoon of pepper
Instructions
- Slice the carrots in half lengthwise and toss in a large bowl.
- Melt the butter in the microwave and then add in the garlic powder, salt, and pepper.
- Pour the butter over the carrots.
- Grate fresh Parmesan Cheese. Sprinkle 1/4 cup of the cheese over the carrots and toss.
- Preheat the oven to 400 degrees.
- Cover a baking sheet with Parchment Paper. Sprinkle the remaining cheese over the parchment paper
- Lay the carrots out over the cheese in a single layer.
- Bake in the oven for 10 minutes. Remove and flip the carrots.
- Put it back in the oven and bake for another 10 minutes.
- Remove and enjoy!
