Ginger Carrot Salad

This Ginger Carrot Salad recipe is the perfect side dish for any night that you want to have Chinese take out! Crunchy carrots are tossed in a garlic ginger dressing. It's a delicious light and simple salad that will hit all those taste buds!

At most Japanese restaurants or Chinese restaurants, you can find this salad on the menu. Made with julienned carrots, soy sauce, garlic, fresh ginger, sugar, and rice vinegar. It is the perfect combination of sweet and tangy.

How to Make the Perfect Carrot Salad

For this recipe you will need —

  • Shredded Carrots (Buy whole carrots and use a julienne slicer to slice them or buy them pre-shredded)
  • Oil: For this recipe, I use olive oil but for added flavor you can add some sesame oil also
  • Vinegar: You can use white vinegar which alot of people use, but I chose to use rice vinegar
  • Garlic
  • Ginger
  • Salt, pepper, sugar, cumin,
  • Cilantro, sesame seeds, and wonton strips for garnish )optional)

To start, wash and peel the carrots if you are using fresh carrots. Save the peels in a ziplock bag and place them in the freezer. I save all my veggie scraps to use in my homemade Chicken Bone Broth.

There are several ways you can julienne the carrots. If this is your first time doing this, you can use a food processor which is the fastest way. You can also do it by hand with a julienne peeler which is what I use. Or, you can use this vegetable chopper that has a 12 in 1 blade. I just got this and I LOVE it!

Combine all the dressing ingredients together in a bowl. This is a different dressing than the Japanese carrot ginger salad dressing at the restaurants. This is more of a marinade dressing.

Now, add the carrots and allow them to marinate for at least 6 hours or overnight in an airtight container.

When you are ready to serve this, top it with fresh chopped cilantro, won ton strips, and sesame seeds. This is the perfect side salad to go with any meal, but I love serving this when I make Chinese or Japenese at home.

Ginger Carrot Salad

This ginger carrot salad is delicious. Crunchy carrots tossed in a dressing flavored with ginger and garlic.

Marinate Time 6 hours
Total Time 6 hours 10 minutes

Ingredients

  • 2 lbs of fresh carrots
  • 3/4 cup of olive oil
  • 1/3 cup of rice vinegar
  • 2 teaspoons of salt
  • 1 teaspoon of ground black pepper
  • 3 tablespoons of sugar
  • 2 teaspoons of ground cumin
  • 5 garlic cloves minced
  • 1 teaspoon of fresh grated ginger

Instructions

Peel and cut the ends off the carrots. Use a julienne slicer and slice the carrots. Place the shreds in a bowl.

In another small bowl, add all the other ingredients and mix well. Pour over the carrots and toss them until coated and combined.

Cover the bowl with plastic wrap and let the salad rest in the fridge for 6 hours or overnight.

When ready to serve, toss the salad and top with fresh cilantro, sesame seeds, and wonton strips (all optional).
