Sourdough Discard Apple Fritters

Whip up a delicious batch of Sourdough Discard Apple Fritters. Once you try making these for the first time, you will skip the donut shop and keep making these for the family and all your friends.

Sourdough Apple Fritters are simple and easy to make. It's also a great way to use up some of the sourdough discard you have tucked away in your fridge.

How to Make Sourdough Discard Apple Fritters

For this recipe, you will need the following ingredients —

  • All-purpose flour
  • Sourdough Discard (if you want to make a non-sourdough version, just omit this ingredient)
  • white sugar
  • baking powder
  • kosher salt
  • ground cinnamon
  • Whole Milk
  • Large Eggs
  • Vanilla Extract
  • Large apples peeled and diced (granny smith apples or my favorite gala apple)
  • lemon juice

To make the glaze, you need powdered sugar and milk.

For the glaze, you need powdered sugar and milk. You can skip the milk and use some maple syrup if you like that flavor better. Maple glaze on top of these fritters is amazing.

Because this recipe uses baking powder instead of yeast, we do not have to wait for it to rise. This recipe resembles my Sourdough Discard Cinnamon Rolls that I make. They use the same technique.

Peel, core, and dice up the apples. Place the chopped apples in a bowl. Squeeze the lemon juice on them and set them aside.

In a large mixing bowl, whisk together the flour, baking powder, sugar, salt, and ground cinnamon.

Add the milk, eggs, and vanilla extract to this same bowl. Mix until just combined. Now, fold in the fresh apples. Mix until they are incorporated throughout the fritter dough.

Fry Up the Fritters

In a Dutch oven or cast-iron skillet, heat the oil over medium-high heat to about 375 degrees F. You can use a candy thermometer to test the heat of the oil.

Use a spoon and spoon the batter into the hot oil. Fry the fritters for about 2 minutes per side or until golden brown.

Remove from the oil with a slotted spoon and place on a wire rack or paper towels to drain. If the fritters seem a little underdone, simply place them in a 350-degree oven for about 10 minutes.

Once the fritters are done, make up the glaze and dip each hot fritter in the glaze. Place it back on the wire rack to dry.

Once the fritters are dry, enjoy them with family and friends!

Eat these as they are or serve them with a scoop of vanilla ice cream. These are best eaten the same day, but you can store the leftovers in an air-tight container for a couple of days. Reheat them in the microwave or eat them at room temperature.

Sourdough Discard Apple Fritters

Delicious fluffy fritter donuts filled with all kinds of apple and sourdough flavor

Ingredients

For the fritter

  • 1 cup of Sourdough Discard
  • 2 cups of all purpose flour
  • 1/2 cup of sugar
  • 1 tablespoon of baking powder
  • 1/2 teaspoon of kosher salt
  • 1 teaspoon of ground cinnamon
  • 2/3 cup of whole milk
  • 2 large eggs, beaten
  • 1 teaspoon of vanilla extract
  • 2 cups of apples diced small
  • 1 tablespoon of lemon juice
  • Oil for frying

For the glaze

  • 1 cup of powdered sugar
  • 2-4 tablespoons of milk

Instructions

  1. Peel, core, and dice the apples into smaller chunks. Toss the apples with the lemon juice and set them aside.
  2. To prepare the fritter batter, grab a large bowl and add the flour, sugar, baking powder, salt, and ground cinnamon.
  3. Now, add in the milk, eggs, and vanilla extract.
  4. Mix the dough well.
  5. Fold in the apples and mix until all the apples are incorporated well.
  6. Heat the oil in a Dutch oven to 375 degrees. Once the oil reaches the right temperature, use a spoon and scoop the dough into the oil.
  7. Let the fritters cook on each side about 2 to 3 minutes. Remove from the oil and place on a wire rack to drain.
  8. If the fritters are not done all the way, place them in a 350 degree oven for 10 minutes to finish cooking.
  9. While the fritters are finishing off, make the glaze in another bowl.
  10. When the fritters come out, dip them in the glaze and place them back on the wire rack to dry.
  11. Enjoy!
