Triple Berry Cobbler

Triple Berry Cobbler is an old-fashioned recipe handed down in my family for a few generations. I remember my grandma making this cobbler for all of us; it was a hit!

The cobbler is filled with fresh berries like black and blueberries, fresh strawberries, and delicious raspberries! It's summer's end, but these berries are still going strong this time of year!

Let me show you how I put this delicious dessert together that showcases some of my favorite berries!

Easy Berry Cobbler Recipe

This delicious cobbler has a pie-like topping that is crunchy and delicious. You can do a biscuit topping if you like, but for this one, I used my double-crust pie recipe and added layers of pie dough between the berries.

The pie dough in the middle gets ooey and gooey and it is my favorite part!

For this easy cobbler, you need just a few simple ingredients —

Ingredients

  • Pie Dough — you can use store-bought or make it from scratch
  • Fresh berries — blackberries, blueberries, raspberries, or strawberries (use fresh fruit not frozen berries)
  • Lemon juice and lemon zest from one lemon
  • white sugar (you can use brown sugar to give it a more caramel and buttery flavor)
  • cornstarch
  • water
  • salt
  • stick of butter (this recipe does not use cold butter. It uses melted butter)
  • extra sugar for the topping

Preheat the oven to 375 degrees F.

Place a 9×13 casserole pan on top of a baking sheet. This is to catch any overfill. Spray the baking dish with non-stick cooking spray. Cast iron skillets are also great for using to make this dessert.

In a large bowl add the juicy sweet berries, sugar, cornstarch, water, lemon juice, lemon zest, and salt. Mix well to combine. Bring the mixture to a boil. Then, turn down the heat and let the berries simmer for about 10 minutes. Be sure to stir occasionally so that the berries don't stick to the bottom of the pan.

If you want to change this cobbler up, simply change the berries. You can use just blueberries and make a blueberry Cobbler with buttery biscuits as a topping. Nothing says you have to use mixed berries.

Pour 3 cups of the syrupy berries into the bottom of the 9×13 baking dish. Set the other berries aside.

Now, take the pie dough and split it in half. Lay one section aside and roll the other out to a 9×13 rectangle. Place it on top of the berries in the baking dish.

Pour the remaining berry mixture on top of the pie crust.

Roll out the remaining dough. You can either place the whole piece on top or you can create a lattice top like I did. If you use the whole piece, be sure to cut slits in the top to let the steam escape.

Bake the Cobbler

Pour the melted butter on top of the cobbler and then sprinkle the sugar on top. If you want to get super fancy, you can use turbinado sugar for the top of the cobbler.

Bake the cobbler for one hour. The top should be golden brown. Remove from the oven and let it sit for about 15 minutes.

To serve the cobbler, place some in the serving bowls and then top with a scoop of ice cream and some fresh mint. You can even add some whipped topping if you like!

Variations

If you want to change this cobbler up, you can also do that by turning it into a dump cake using a cake mix and butter. Sprinkle a box of cake mix over all the berries once they are in the pan. Then, drizzle on some melted butter and bake. The cake mix and butter create coarse crumbs on the top that are simply to die for! Each bite is delicious.

To Store

To store the leftovers, cool the cobbler to room temperature. Now, wrap it with plastic wrap and place it in the fridge. When ready to eat, scoop it into serving bowls and heat it in the microwave before serving it to friends and family.

I always feel like this cobbler is even better the next day, especially with a scoop of vanilla ice cream!

Simple and easy cobbler made with all of summers fresh berries.

Ingredients

  • 2 boxes of refrigerated pie crust dough (or make your own from scratch)
  • 60 ounces of fresh berries (blackberries, blueberries, raspberries, or strawberries)
  • 1 lemon juiced and zested
  • 1 1/2 cups of white sugar
  • 4 tablespoons of cornstarch
  • 1/4 cup of water
  • 3/4 teaspoon of salt
  • 1 stick of salted butter (can use unsalted if you prefer)
  • 1/4 up extra of white sugar or turbinado sugar

Instructions

  1. Preheat the oven to 375 degrees F.
  2. Place a 9x13 baking dish on a cookie sheet. Set aside.
  3. In a large bowl, combine the berries, sugar, cornstarch, water, lemon juice, lemon zest, and salt. Mix well and then pour in a pot and place the pot on a stove.
  4. Bring the mixture to a boil. Then, turn down the heat and simmer for 10 minutes while stirring occasionally.
  5. Add 3 cups of the filling to the baking dish.
  6. Now, take the pie crust and divide it in half. Roll half of the dough into a rectangle and place over the berries in the dish.
  7. Add the remaining berries to the top of the dough.
  8. Roll the other portion of the dough out and cut it into lattice strips. Place over the berries. You can leave the dough rectangle whole. Just be sure to cut slits in the top to allow the steam to escape.
  9. Melt the stick of butter and pour over the cobbler. Sprinkle on the remaining 1/4 cup of sugar.
  10. Bake in the oven for one hour.
  11. Remove from the oven and let it cool for 15 to 30 minutes before cutting into it.
  12. Serve with ice cream, whipped cream, and some fresh mint.
