No Bake Strawberry Icebox Cake
If you love fresh strawberries like I do, then you will love this easy dessert! This strawberry icebox cake recipe is one of the easiest icebox cake recipes you will make.
To make this no bake cake, you need the following list of simple ingredients:
- 3 boxes of instant pudding mix (I used white chocolate, but you can use cheesecake, vanilla, etc)
- 4 cups of milk (you can do half heavy cream, half milk or half and half)
- 2 cups of whipped topping (regular Cool Whip is the best option)
- 1 box of graham crackers
- 3-4 cups of chopped or sliced strawberries
In a large mixing bowl with an electric mixer or the bowl of a stand mixer, add the pudding mix, cold milk, and whisk until combined.
Fold in the whipped topping and mix well. If you want to make homemade whipped cream with heavy whipping cream instead, make sure to add gelatin to it to make it stable. Set it aside.
Layering the Dessert
In a 9×13 rectangle pan, line the graham crackers on the bottom of the pan. This thin layer creates the perfect cake-like texture and really adds to the texture of this dessert. Not a fan of graham crackers? Try using vanilla wafers instead.
If you want to make this into a smaller dessert to share with a friend, use a loaf pan instead.
Spoon a third of the pudding/cool whip cream mixture on the top of the crackers and spread gently and evenly with a spatula.
Toss some of the strawberries on top.
Add another layer of graham crackers on top of the strawberries, then spread another third of the creamy filling on top of that, topped with more strawberries.
Arrange the final layer following the same suit — graham crackers sheets, pudding mixture, then finish the top layer with the remaining strawberries.
Cover the dessert with plastic wrap and place in the fridge or freezer for 6 to 8 hours. This will allow the filling to set.
When ready to serve, slice the dessert into squares. Top with fresh mint and serve to your friends and family!
For best results, store the leftovers in the fridge in a sealed airtight container. This dessert will last about 3 days.

Easy, old fashioned no bake icebox cake recipe also known as a refrigerator cake. It has simple ingredients with layers of graham crackers, white chocolate pudding mix, Cool Whip and some fresh strawberries for the perfect summer dessert.
Ingredients
- 3 3.4 ounces of Instant White Chocolate Pudding Mix
- 4 cups of whole milk
- 2 cups of Cool Whip Whipped Topping

Instructions
- In a large mixing bowl, combine the pudding mix and the milk. Mix until well combined.
- Fold in the Cool Whip and then set it aside.
- Using a loaf pan for 2 desserts or in a 9x13 pan, line the graham crackers on the bottom to cover the whole pan.
- Cover the graham crackers with 1/3 of the pudding mixture and then top with the chopped strawberries.
- Repeat this process two more times. Top the final layer with the last of the strawberries.
