Frozen Strawberry Cream Pie

Summer is here and it is a HOT summer day! This Frozen Strawberry Cream Pie or as the older generation calls it an icebox pie is a no-bake dessert perfect for serving your family. It features a delicious graham cracker crust with a strawberry and cream cheese filling. Top the pie with whipped topping and fresh strawberries for the best summer dessert you will make! This is the perfect dessert to make for strawberry season.

I love making this delicious dessert and putting it in the freezer for a quick and easy side dish to prepare. It's great for barbecues, parties, or even as a housewarming gift for the new neighbor.

How to Make This Strawberry Pie Recipe

To make this delicious ice-cold dessert, here is what you will need —

  • Graham Cracker Crust (store-bought graham cracker crust or use graham crackers to make a homemade crust)
  • Heavy Cream (or you can cut this step and just use whipped topping from the freezer section at the grocery store)
  • Sweetened Condensed Milk
  • Cream Cheese
  • 1 bag of frozen strawberries and a pint of fresh strawberries
  • Mint Leaves

The thing that I love about this freezer pie is that it's simple ingredients that make this pie budget-friendly as well.

For a homemade crust, mix melted butter with graham cracker crumbs and place on a pie plate. Flatten the crust out and bake in a 350-degree oven for 10 minutes. Let it cool completely before adding your chilled ingredients.

For pies like this, I like to use store-bought crusts. That makes it the perfect no-bake pie for hot summer days.

Make sure that all the ingredients are cold before using them. This will make the pie freeze quicker.

If you are using heavy whipping cream, in a small bowl whip the cream until stiff peaks form. Place the cream in the fridge until ready to add it to the pie filling. If you are using Cool Whip, defrost it in the microwave for about 20 seconds. This will make it easier to mix into the pie.

In a mixing bowl, add the cream cheese and the condensed milk. Mix well with an electric mixer. You can also use a stand mixer if you want. Set aside.

Make the Strawberry Puree

Take the frozen strawberries and add them to a food processor. Pulse until you have a strawberry puree and everything is chopped fine. Mix the strawberries with the cream cheese mixture.

Now, take the whipped cream or frozen whipped topping and fold it into the pie. Once you get it mixed well, pour the filling into the buttery graham cracker crust. Cover the pie with plastic wrap or the cover the crust came with and place it in the freezer. Freeze the pie for about 4 hours.

Serve the Pie

About 10 minutes before ready to serve, take the pie out of the freezer. Slice the pie and top with more whipped topping, a few fresh sliced strawberries, and sprigs of mint leaves.

If you have any leftover frozen pie, place it back in the freezer. The pie should last for a couple of weeks.

Ingredients

  • 1 9 inch graham cracker pie crust (i prefer the store-bought but you can make a homemade one if you want)
  • 1 cup of heavy cream or you can use an 8 ounce tub of frozen Cool Whip
  • 4 ounces of cream cheese
  • 1 14 ounce of sweetened condensed milk
  • 1 small bag of frozen strawberries or 1 pint of fresh strawberries (enough to make 2 cups of pureed strawberries)
  • Extra whipped topping and strawberries for garnish
  • Mint sprigs for garnish

Instructions

  1. If you are using heavy cream, in a small bowl, whip until stiff peaks form. If you are using Cool Whip, thaw for 30 minutes before using. Set aside.
  2. In another medium bowl, whip the cream cheese and condensed milk until creamy.
  3. Now add in the strawberries and mix well.
  4. Fold in the whipped cream or the whipped topping.
  5. Stick the pie in the freezer to set at least 4 hours.
  6. About 10 to 15 minutes before serving the pie, remove it from the freezer and allow it to rest.
  7. Slice the pie and top each piece with a dollop of whipped topping and a fresh sliced strawberry.
  8. For additional flavor add mint leaves to the top.
