Make homemade breakfast sausage and skip the store-bought breakfast sausage. This recipe is freezer-friendly and very easy to make. This sausage has the best flavor thanks to all the amazing spices used to enhance the taste.
To make this recipe, you only need a few simple ingredients. Check out the recipe and technique below for making your sausage from scratch.
Homemade Breakfast Sausage Recipe
For this recipe, you will need the following ingredients —
- 1 pound of ground pork
- 1 tablespoon of fennel seed
- 1/2 teaspoon of ground rosemary
- 1/2 teaspoon of thyme
- 1/4 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon of oregano
- 1/2 teaspoon of marjoram
- 1/4 teaspoon of sage
- 1/8 teaspoon red pepper flakes
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- pinch of nutmeg
This spice mixture list is for a small batch, but if you want to make a large batch, just double or triple the recipe.
I know that seeing the list of spices can cause some people to think that there are just way too many spices. However, trust me when I say, that when you taste this sausage, that list will not seem daunting at all. If you are any type of cook, most of these spices are already in your spice drawer at home.
If you want to make maple-flavored pork sausage, add 1/4 cup of maple syrup to the ground pork. For spicy sausage, add 1/4 teaspoon of cayenne pepper.
You can find ground pork at the grocery store, however, if they are out, you can grind your own at home with your stand mixer and the meat grinder attachment. I like to use pork butt or pork loin for grinding pork at home.
Whatever you do, do not substitute ground beef for ground pork. They are two different cuts of meat.
Mixing Sausage
In a large bowl, combine all your spices along with the ground pork and mix well together. Place it in an airtight container. You can also cover the bowl with plastic wrap if you don't have any containers to put it in. Let the mixture hang out in the fridge overnight. This will give the spices time to do their job and permeate the meat.
If you want to make sausage crumbles, add the ground pork mixture to a large skillet and cook over medium heat until the pork is no longer pink. I like to use sausage crumbles for my homemade sausage gravy recipe.
To make homemade sausage patties, scoop out 1/4 cup of the meat mixture and flatten to form patties. Place the patties in a single layer on a parchment paper-lined baking sheet. Freeze them or cook them right away. I use these patties to make delicious breakfast sandwiches.
If you want to make homemade breakfast sausage links, use a sausage stuffer and sheep casing or hog casings to create the links. Then, cook as normal in the pan. You can also change it up and add some Italian seasoning to the sausage and a hint of brown sugar to make Italian sausage if you prefer that over breakfast sausage.
Cooking Breakfast Sausage
Heat a cast iron skillet over medium-high heat. Add the sausage to the pan. If you are cooking crumbles, cook until no longer pink. For patties, cook for 3-4 minutes per side or until the sausage feels firm to the touch.
For sausage links, cook it the same way.
Your own homemade breakfast sausage tastes better if used within a couple of days. It will last 4-6 weeks if frozen.
Making Homemade Spice Blends
When making a spice blend, I like to use a mortar and pestle to grind them fine so that I don't have big spices in my fresh sausage.
Once you get the sausage cooked, you can use it in a variety of dishes. However, if you want to use the sausage in dishes before cooking, you can. One of my favorites is my homemade sausage balls.
