Taco Tortilla Rollups

These simple taco tortilla rollups are the perfect party appetizer or — you can serve them for a light dinner with chips and salsa. Either way, they will become a new favorite treat among your family members.

Anytime I have a party or I am asked to cater an event, I always make sure to make a triple batch of my Taco Tortilla Rollups.

The inside is filled with cream cheese, sour cream, cheddar cheese, diced jalapeno, taco seasoning, and cilantro. It truly is the perfect tasty appetizer for every holiday or a party.  

One of the reasons that I love making this delicious little bite of goodness is because you can make them up the day before and let them rest in the fridge until you are ready to serve them.

WHAT DO YOU NEED TO MAKE THESE ROLL UPS?

  • 6 Burrito sized flour tortillas
  • 8 ounces of Cream cheese, softened
  • 4 ounces of Sour cream
  • 2 tablespoons of taco seasoning
  • 1/3 cup salsa
  • 2 jalapenos, seeded and diced finely
  • 1 1/2 cups shredded Cheddar cheese
  • 1/3 cup Cilantro, finely chopped

You can add chicken to this recipe if you like or you can add ground beef to make it more like a taco, but I like mine without meat. It makes it safer to sit out longer at parties with no meat in them.

HOW TO PREPARE TACO TORTILLA ROLL UPS

In a large bowl, combine cream cheese and sour cream. Add the taco seasoning, diced jalapeno, and taco sauce and mix until combined.

Stir in cheddar cheese and cilantro. Now, spread over tortillas using a spatula.

Roll tight and leave in the fridge for a few hours. Cut into rings 1/2 inch thick. Serve with sauces like my homemade guacamole, restaurant-style Mexican cheese dip, and my Pioneer Woman Salsa.

Yield: 60 rolls

Taco Tortilla Roll-Ups are a quick and easy party appetizer filled with cream cheese, sour cream, cheddar cheese, diced jalapenos, taco seasoning, salsa, and cilantro.

Ingredients

  • 6 Burrito sized flour tortillas
  • 8 oz Cream cheese, softened
  • 4 oz Sour cream
  • 2 tablespoons taco seasoning
  • 1/3 cup salsa
  • 1 1/2 cups shredded Cheddar cheese
  • 2 jalapenos, seeded and finely diced
  • 1/3 cup Cilantro, finely chopped

Instructions

    1. In a large bowl combine cream cheese and sour cream.
    2. Add the taco seasoning and salsa and mix until combined. Stir in cheddar cheese, diced jalapeno, and cilantro.
    3. Spread the filling over each tortilla using a spatula. Roll tight. Cover with plastic wrap.
    4. Repeat the same procedure until all the ingredients are used.
    5. Keep refrigerated until the cream cheese firms back up.
    6. Cut into 1/2 inch thick wheels using a serrated knife.
