The marinade is made with simple ingredients like fresh cilantro, olive oil, lime zest, fresh lime juice, chili powder, cumin, salt, and pepper. This is the perfect meal for anyone who is a cilantro lover like me.

A few months ago I finally invested in a Blackstone Griddle

I have heard nothing but amazing reviews on them, so after checking them out, we headed out to the store and bought one for our family as well! Cooking on a Blackstone helps cut down on the cooking time for those busy nights when you need to get all the elements cooked at once.

Since getting this, I have made SO many amazing meals on it. We had a Hibachi Night complete with the best fried rice I have ever made and my Teriyaki Chicken recipe. And, making food on this has a cooking even thickness since it is basically like cooking on a large cast iron griddle.

Of course, nothing beats my Blackstone Philly Cheesesteak Sandwiches. But my new favorite recipe is this one for Blackstone Griddle Cilantro Lime Chicken.

How to Make easy cilantro lime chicken recipe

This recipe is simple, it’s quick, and it yields the most flavorful, zesty chicken anyone can ask for. You can use boneless skinless chicken breasts, tenderloins, or skinless chicken thighs for this chicken recipe. I used chicken tenderloins because the cooking time is a lot less than large chicken breasts.

If you want to use skin on chicken you can. It will have a crispy skin that tastes like the perfect bite of lime.

Once they marinate with the lime juice and other spices, simply throw them on the Blackstone over medium-high heat and serve with rice or use for tacos, bowls, or salads. Make sure to cook the chicken to a 165-degree internal temperature.

The great thing about doing this on the Blackstone Griddle is that you can load it up with everything all at once, which means you cut down on the time it takes to prepare and cook it.

While the chicken was cooking, I decided to throw some potatoes on the grill and smash them (that recipe is coming soon). Of course, you can also serve my delicious cilantro lime rice and a side of cooked black beans.

If you use this chicken for tacos, I like to top mine with sour cream, cotija cheese, homemade pico de gallo, lime wedges, and my amazing guacamole.

I have found it a lot easier to eat healthier since getting my Blackstone also. Making a full meal here is just so easy. And the best part is that this chicken cooked on the Blackstone is great for meal prep.

Make delicious burrito bowls and top it with mango salsa. Want a healthier version, then add cauliflower rice. Serve it with a side of my Blackstone Mexican Corn Salad. It's a great recipe that can be modified in so many amazing ways.

What if I don't have a Blackstone?

If you don't have a Blackstone, no worries. Just grab a grill pan and make this right on the stovetop. You can also cook this over an open flame on the grill until it is golden brown.

Blackstone Griddle Cilantro Lime Chicken

This is the tastiest zesty cilantro-lime marinade ever. And the chicken comes out perfectly juicy and tender.

Ingredients

  • 1/4 cup chopped fresh cilantro leaves
  • 3 tablespoons extra virgin olive oil, divided
  • 2 tablespoons freshly squeezed lime juice
  • 1 tablespoon lime zest
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • 2 pounds boneless, skinless chicken breasts or tenderloins

Instructions

    1. In a medium bowl, combine cilantro, olive oil, lime juice, lime zest, chili powder, cumin, salt and pepper.
    2. In a gallon size Ziploc bag or large bowl, combine chicken and cilantro mixture; marinate for at least an hour to overnight, turning the bag occasionally. Remove the chicken from the marinade
    3. Turn the Blackstone on high. Once it is heated, drizzle a little oil and butter onto the griddle.
    4. Place the chicken on the Blackstone and let it cook about 4-5 minutes per side or until the chicken reaches 165 degrees internally.
    5. Serve immediately with your favorite sides.

Notes

If you do not have a Blackstone, you can make this in a cast iron skillet.
