During Thanksgiving Dinner and Christmas, one of my best-loved dishes is my Sweet Potato Casserole with brown sugar. But sometimes you just want something different. That's how these walnut maple-roasted sweet potatoes came about. It reminds me of yams but with a delicious walnut topping instead. Sweet potatoes are one of my favorite root vegetables.
How to Make Cinnamon Maple Roasted Sweet Potatoes recipe
For this recipe, you need the following ingredients —
- Sweet Potatoes
- Butter (you can use salted butter or unsalted butter)
- Pure Maple Syrup (do not use Pancake syrup)
- Chopped Walnuts
- Fresh Thyme
- Cinnamon
- Salt
- Pepper
Preheat the oven to 400 degrees. Wash the sweet potatoes and dry them off. Slice them about 1/2″ thick. You can turn them into sweet potato cubes but the slices are a better option.
Mix the salt, black pepper, butter, and cinnamon in a small bowl. Toss the potatoes with the spice mix making sure to coat each potato well.
Grab a sheet pan and add some parchment paper to it. Spread the potatoes out evenly in a single layer making sure that they do not crowd each other. They will steam if there are too many on the tray.
Bake the potatoes in the oven for 30 minutes until the potatoes become tender but firm and golden brown.
While the potatoes are cooking, mix in another small bowl the maple syrup, chopped walnuts, cinnamon, and thyme.
Once the potatoes have cooked for 30 minutes, spoon a teaspoon of the mixture on top of each potato slice.
Place the baking sheet back in the oven and let it cook for about 10 more minutes.
Serve as is or add some tangy feta cheese to the top.
How to Store The Sweet Potatoes
Store the sweet potatoes in an airtight container in the refrigerator. They should last about a week.

So which mixture does the thyme go into? It's on the ingredient list but never mentioned where it comes into play.
