Recently, this pink dragon fruit jumped out at my daughter. With this new fruit, there for sure will be some new recipes coming soon!

What exactly is dragon fruit?

Great question! Dragon fruit also known as pitaya is a tropical fruit. It comes from a cactus and is native to Mexico and Central America.

There are several kinds of dragon fruit, including pink skin with white flesh. There is also pink skin with pink/red flesh. There's also a yellow-skinned with white flesh dragon fruit.

How to Make Dragon Fruit Syrup

To make this syrup, add the dragon fruit to a saucepan. Next, add the water and the sugar. Allow this to heat on the stove over medium-high heat until it starts to boil. Turn it down and let it continue cooking over medium heat for 10-15 minutes.

The dragon fruit will start to dissolve, and the sugar will melt and become liquid. Remove from heat and allow it to cool for 15 minutes. If you want to puree the syrup, add it to a blender. I like to strain mine and remove the black seeds before doing this.

Once you strain the black seeds out, puree the mixture in a blender to get it nice and smooth. Store in a bottle in the fridge. This syrup is good for at least a month. Be sure to keep it in a cool place like the refrigerator.

Use to make drinks like this Yellow Dragon Fruit Refresher. If you want to use yellow dragon fruit instead of the pink one, all you have to do is switch out the fruit. The process is still the same.
