This Simple Kale Salad with Honey Lime Dressing is the perfect light summer salad. I love to top mine with fresh radish microgreens for a little heat.

I love it when it gets Spring and Summer in our area. Having fresh veggies right out of the garden this time of year is my favorite thing. This simple kale salad is all things Summer and tastes so refreshing thanks to the sweet Honey Lime Dressing on top.

How to Make a Simple Kale Salad

You can use any kale leaves you want for this salad, but I have discovered dinosaur kale that I get in my weekly Harvest Crate order. I just cut it up into bite-sized pieces and just give the raw kale a little massage with a drizzle of olive oil. The massage will keep the kale from having a bitter flavor.

I like it because it is more tender than curly kale. However, if you prefer baby kale, you can use that also.

To make this salad even more tender, I massage the leaves with olive oil before adding all the other components to the salad.

Because this salad is so versatile, you can pretty much add anything you want to it into a large bowl. We scrounged through the refrigerator and found some feta cheese and pecans. If you don't like feta cheese, you could also choose Parmesan Cheese.

Then, we added fresh radish microgreens for the most amazing salad flavor I have ever tasted. My favorite nut to use on a salad like this is sunflower seeds or pumpkin seeds. If you have a nut allergy, you can just leave them out together and add croutons for the crunch factor instead.

For an extra touch, you can add some green onions or crisp apples to the top. Another great option for this salad is prepared avocado or fresh cilantro.

The Honey Lime Vinaigrette Dressing

What I love about the dressing for this salad is how simple it is to make. The dressing is honey and lime juice with just a hint of olive oil and is the best part of the salad. I just mix it up in a mason jar and place it in the fridge until I am ready to use it.

Then, season the salad with a small pinch of sea salt and pepper and you have a complete meal. You can use this as a side dish, or if you eat a vegetarian diet, this big salad bowl would be a great lunch or dinner.

Simple kale salad with the most perfect dressing.

Ingredients

  • 6 cups of kale
  • 1/4 cup of microgreens
  • 1/4 cup of crumbled feta cheese
  • 1/2 cup of chopped pecans
  • 1 Tablespoon of olive oil

For the dressing

  • Juice of 1 lime
  • 1 Tablespoon of honey

Instructions

  1. Chop the kale and drizzle on the olive oil. Massage into the leaves.
  2. Mix together the lime and honey and pour over the kale.
  3. Add the other ingredients and mix with a spoon.
  4. Season with salt and pepper and then serve.
