The Blackstone’s wide, flat surface is ideal for cooking multiple components at once—steak, chicken, shrimp, fried rice, and vegetables—all sizzling side by side. It gets hot enough to achieve that perfect sear, and its ample cooking space makes it easy to feed a crowd. Ingredients You’ll Need

Here’s what I use to make a full hibachi dinner at home:

Proteins (choose one or mix them up!):

  • 1 lb steak (ribeye or sirloin), cubed
  • 1 lb chicken breast or thighs, cubed
  • 1 lb shrimp, peeled and deveined

Vegetables:

  • 1 zucchini, sliced
  • 1 onion, chopped
  • 1 cup mushrooms, halved
  • 1 carrot, julienned
  • 1 small head of broccoli, chopped

Fried Rice:

  • 3 cups cold, cooked rice
  • 2 eggs
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1/2 cup peas and carrots (frozen mix works great)
  • 2 green onions, chopped

Sauces:

Extras:

  • Butter
  • Garlic
  • Sesame seeds (optional)
  • Cooking oil (vegetable or avocado)

Step-by-Step: Hibachi on the Blackstone

1. Preheat and Prep

Fire up your Blackstone and set it to medium-high heat. While it’s heating, season your proteins with salt, pepper, and a splash of soy sauce. Get all your ingredients lined up and ready—this is fast-paced cooking!

2. Cook the Rice First

Start by adding a bit of oil to one side of the griddle. Crack the eggs and scramble them, then push them aside. Add the cold rice, veggies, and sesame oil. Stir everything together and season with soy sauce. Once heated through and lightly crispy, move the rice to a warm zone.

3. Cook the Proteins

Add a bit more oil and a pat of butter to the griddle. Cook the steak, chicken, or shrimp (or all three!) until browned and cooked through. Add minced garlic and a splash of teriyaki or soy sauce near the end. I like using the Kinders Japanese sauce because it has so many delicious flavors! Transfer to a warming area.

4. Sauté the Veggies

Toss your sliced veggies onto the griddle with a bit more butter or oil. Season with salt, pepper, and a dash of soy sauce. Cook until tender-crisp, about 5–7 minutes.

5. Plate It Up

Serve your hibachi meats with a generous helping of fried rice and sautéed veggies. Don’t forget a drizzle of Yum Yum sauce to tie it all together!

  • Use cold rice: Fresh rice will turn mushy. Cook it the day before for the best texture.
  • Don’t overcrowd the griddle: Give everything room to cook evenly and develop that signature sear.

Instructions

    Preheat the Griddle: Set your Blackstone to medium-high heat.
    Fried Rice:
    Add oil and scramble the eggs.
    Add rice, peas & carrots, sesame oil, and soy sauce. Stir-fry until heated through. Push to the side.
    Cook the Proteins:
    Add oil and butter, then cook your choice of steak, chicken, or shrimp.
    Add minced garlic and a splash of soy or teriyaki sauce before removing.
    Sauté the Veggies:
    Toss veggies on with oil and butter.
    Season with soy sauce, salt, and pepper. Cook until tender-crisp.
    Serve:
    Plate with fried rice, veggies, and your protein of choice.
    Drizzle with Yum Yum sauce and sprinkle sesame seeds if desired.

Notes

Use cold rice for best texture.
Don't overcrowd the griddle—cook in batches if needed.
Homemade Yum Yum sauce can be made with mayo, ketchup, garlic powder, sugar, and a splash of vinegar.
