Zucchini Bread Made from Scratch

Zucchini Bread is one of those delicious sweet breads that I cannot get enough of. Super moist bread that is chocked full of delicious shredded zucchini. It's a great way to get those veggies in without all the fuss.

Last week while visiting my local farmer's market, I grabbed a few zucchini. I had planned on making some kind of roasted vegetable dish, but never got there! 🙂 Instead, I made a delicious zucchini bread–which has become one of my favorite sweet treats!

While this bread is still sweet bread, I love it that my family is getting a dose of veggies and don't even realize it. In fact, I used 4 whole zuchinni (they were small) in this recipe.

Hide the veggies in the food to get the kids to eat them!

That is a secret I have always done and it works wonders for getting everyone to eat their veggies! Zucchini are so easy to use in recipes — and you can dress them up in all kinds of ways to get your kids to eat them.

In fact, one of my favorite recipes is creating Zoodles — Zucchini Noodles. Then you cover them with your favorite homemade spaghetti sauce and Parmesan cheese, and then from there, your kids will LOVE their new healthy dinner.

Other foods you can hide your veggies in are like making a homemade carrot cake. It is choked full of carrots and if you make my homemade cream cheese frosting, they will never know they are eating their veggies!

To make the Zoodles, you have to have a special tool — like this spiralizer. It takes all the work out of making those noodles and you can create your dish in as little as minutes.

How to Make Zucchini Bread

Making this zucchini bread is simple and easy. After shredding your zucchini, then you simply mix everything together and bake in a bread pan in the oven for about an hour.

I like to serve my slices warm with a pat of butter. There is nothing like a sweet bread that comes straight out of the oven, all warm and flavorful, and then topped with a gorgeous pat of real homemade butter.

Zucchini Bread

This delicious sweet bread is full of veggies and tastes amazing!

Prep Time 10 minutes
Cook Time 1 hour 50 seconds
Total Time 1 hour 10 minutes 50 seconds

Ingredients

  • 3 eggs
  • 3/4 cup vegetable oil
  • 1 2/3 cups packed brown sugar
  • 2 cups grated zucchini
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 3 teaspoons ground cinnamon
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt

Instructions

  1. Preheat the oven to 325 degrees.
  2. In a large bowl, beat eggs well. Add oil, brown sugar, zucchini, and vanilla; stir well. Blend in flour, cinnamon, baking powder, soda, and salt.
  3. Pour batter into two greased and floured 9 x 5-inch loaf pans.
  4. Bake at 325 degrees F for 50 to 60 minutes.
  5. Cool for 15 minutes and then serve warm with a pat of butter.
