Cucumber Mint Agua Fresca

Learn how to make this Cucumber Mint agua fresca, a simple, refreshing, non-alcoholic blended drink of fruit, veggies, lime, and water. They're great for Cinco de Mayo and to sip by the pool this summer.

Aguas Fresca, which means “fresh waters” in Spanish, is a light, refreshing, blended beverage that is super popular in Mexico, Central America, and the United States. 

This drink is non-alcoholic and perfect for the whole family. Another great drink would be this Jamaica drink — a non-alcoholic Hibiscus tea.

Now that my herb garden is in full swing, I can finally get back to making all my favorite non-alcoholic drinks with you.

These were a summertime favorite last year and I have SO many new ones in the works. Some of the most popular last year was the Coconut Lavender Lemonade, Tropical Sunrise, Tropical Fruit Tea, Strawberry Limeade, and more!

HOW TO MAKE THIS REFRESHING AGUA FRESCA

To make this drink all you need is —

  • 2 large cucumbers
  • 1 cup of lime juice
  • handful of mint
  • 2/3 cup of sugar
  • a thumb-sized piece of ginger
  • 14.5-ounce can of chunked pineapple with juice
  • 2 cups of water
  • honey
  • salt for the rim
  • extra lime and lemon slices

Chunk everything up and put it in your food processor. You won't add the honey or salt to the food processor. This is for the rim of your glass.

Once you have everything pureed in the food processor, use a strainer and pour it out. Throw away any excess fruits and veggies from the puree.

Take the honey and dip the edges of each glass in the honey and then pour the flaky salt onto a plate. Dip the glasses in the salt to rim them.

Now, add ice to each glass and top off with the agua fresca. Top each glass with some pineapple or regular mint and some fresh lemon and lime wedges. Enjoy this refreshing drink all summer long!

Ingredients

  • 2 English cucumbers
  • 1 cup of lime juice
  • 1 handful of fresh mint
  • 2/3 cup of sugar
  • 1 thumb sized piece of ginger
  • 1 14.5 ounce can of pineapple chunks and the juice
  • 2 cups of water

For the garnish

  • Honey
  • Margarita Salt for rimming the glass
  • lemon slices
  • fresh mint

Instructions

  1. Blend everything together in a food processor. Strain and set aside.
  2. Take the honey and rim each glass. Pour the salt in a plate and place each glass in the salt to rim where the honey is.
  3. Fill each glass with ice. Pour the agua fresca in the glass and top with lemon slices and more fresh mint. Enjoy!
